I have been looking at recipes on-line for dum ka keema (on youtube, so I can see how it looks as well), but in each recipe, the keema still looks like regular keema.
I have eaten dum ka keema at 3 different Memon families houses, and the dum ka keema is like a paste almost. I want to make it in that style.
Does anyone know how I can get the keema like that? I was thinking of pulsing it in the food processor, do you think that would work?

my mum made dum ka qeema on saturday for a dawat, we arent memon but it was a very fine consistency and very very soft...would you like the recipe?
My inlaws are Memon and make delicious dum ka keema. I have a recipe written somewhere, will try to dig it up. I remember it said to marinate the keema with all the spices and the raw payaya overnight, I think thats what makes it so soft and paste like. You dont have to put it throw the processor. Some people fry it like normal keema, the recipe I have calls for baking
I marinate finely minced qeema with fried onions and minced raw papaya for a few hours or even overnight
Then I dry roast some besan and whole spices like dried red chillis,garam masala,green elachi and some jaifal which are then ground and added to the qeema with some salt too.
I then do the dhuwa bit and bake in the oven for about 45 mins and garnish.
Whenever I have fried it,it looks very pale and unappetizing...
oh yah, a few months ago my cousin told me to use meat tenderizer and behari kebob masala (add yogurt and fried onions) (I cant find raw papaya where I live), then fry it, and dum it with a hot coal. It turned out just like the ones I have had before! I should have updated this thread.
