I got this product by Shan which mind you smells worst than meat itself. disgusted
Anyway … so I ended up leaving it on meat for 45 mins like the directions said but washed it off since I couldn’t take the smell and the end results… meat was still not tender enough after being cooked.
Was washing off not the right thing to do?
What if I leave it on for a few hours (rather than 45 mins), wash off then cook the meat?
Please reply asap. I need to cook a few meat dishes by tonight.
^Yeah same here.......didn't wanna use a chemical product but the meat we got this time just doesn't get tender enough. I have never used papaya for that purpose, might give it a try when I get it next time.
For now all I have is the shan meat tenderizer in powder form. :(
Saj, use papaya next time .. and excellent tenderizer … and stay away from chemicals … for something like shan powder , its expected to keep the meat for a few hours , 45 minutes is not enough for it … I too wash it off if ever i use it ..coz it smells disgusting and the last thing i want in my food is all that smell :no:
khair , use a pressure cooker for nw , but for future , do try out papaya , it works like a dream
I know, the smell is disgusting. If you have to, buy McCormick's tenderizer. Otherwise if you marinate any meat for 24 hours, it gets tenderized automatically.
Although Shan meat tenderizer smells bad & really really bad it won't affect the taste or smell of the meat once its done. I have used Shan meat tenderizer before. Both time the meat was marinated for almost 13 hours though. Go ahead & use it. You don't need to wash it off.

You can slice it really thin & mix it with the meat or blend it & make a paste out of it. They even have ready made Raw papaya paste in most Desi grocery stores now.
Puree the papaya and put in on the meat like paste to marinate for a few hours. Key is, the papaya must be green/underripe.
Since a single papaya yields a lot, we put it in an ice-cube tray, freeze it and use as necessary. You don't really need more than one/two cubes for a pound of meat.
I used raw papaya for the first time this week and omg its amazing. Meat was falling apart after just few hours..
I've used tenderizers in the past, I don't have bad experience with it. There are some that are seasoned. Just don't buy those. I haven't tried Shaan's.
Yeah Sara, I got it from Jackson Hts. Any desi store would have them. Its call "katcha papita." Its green in color and you have to use the skin of papaya too.
also, if i wanted to marinate my meat, would I have to use the papaya first, tendorize it, and then marinate the meat? or can i do it all at the same time?
