meat question

I was watching a cookery show on tv, and the person was cooking lamb/mutton, and she was saying that when you boil meat (as when you make bhuna gosht) you should always skim off the skum which rises to the top whilst it is boiling, because if you don’t get rid of this, then it mixes with sauce and ruins the taste of the curry

i heard the same thing about daals 2. u know how daal boild and the foams rises? I was told that you should get rid of it so it doesnt ruin the taste.

I was interested to see what other people thought about this, sometimes when i make gosht, it does smell a bit weird, and now i'm thinking its because maybe i didn't take off the surface residue, which contains impurities from the meat. You should get rid of this at the early stages of cooking.

I sometimes even add the meat to boiling hot water for a minute or two and discard the water and then start with clean water. I have major issues when it comes to blood :yukh:
