Mayonnaise in Cake?

So I am in love with the chocolate cake they have at Portillo’s because it is SO soft, SO moist and So good!

I asked around because its unusual for a chain like Portillo’s to have such amazing cake! I was told their secret ingredient is MAYO!

Who uses mayonnaise in their baking?

Re: Mayonnaise in Cake?

I've never used it but I can understand why...mayo is basically eggs and oil and those ingredients are used often in cakes.

Re: Mayonnaise in Cake?

I have never heard of it:no:

Re: Mayonnaise in Cake?

i haven't heard of mayo, but i have heard zucchini makes a kick ass chocolate cake ingredient! who woulda thunk it?

Re: Mayonnaise in Cake?

I’ve heard of both Mayo and sour cream being used in cakes for a soft/fluffy cake. I use sour cream but have always wondered how mayo would taste since it has salt in it :hmmm:

Re: Mayonnaise in Cake?

I have heard of it many times but have not tried it out. It basically replaces butter, as my sister says it's just exchanging a type of 'fat' for another type of 'fat'
