I want to try and make koftay tomorrow and .urgently need a tried and tested recipe please. Also, to make the gravy really smooth, are you meant to blend raw onions, ginger, garlic, tomatoes, in blender to a paste first, then fry, or do you have to blend ingredients after they are cooked?

We sautee the onions, add tomatoes etc and then blend the mixture to get a gravy and then add water to get the desired consistency. Add your koftas and cook.

Thanks for your replies. I'm just confused about the blending of onions, ginger garlic and tomatoes. While they are raw do you blend them all in blender then cook paste ( wouldn't they turn into a mushy mess?) Or do you grind them after fried. Sorry for all the questions, its just that i hate it when you get little bits of onions floating about in salan.

Grind them after browning them. This way they won't be mushy.

^and its also faster that way. if you fry onions after grinding them it takes longer but either way doesn't effect the taste.
