I need to marinate some mutton chops and tikka and freeze it. I want to be able to take it out from time to time and cook it in minimal time. Can I tenderize the meat and then marinate it? will the meat be bland if I do so? what else can I do..please help.
Re: Marinating mutton - help
I have used tenderizer / marinated in mutton chops n tikka, frozen for a week then used it, it's been absolutely fine.
I don't think it will make that much difference if u use it later. In case of doubt, just put more spices / yogurt on afterwards.
Re: Marinating mutton - help
If you are planing to marinate it for long, I doubt if there is any need to tenderize the meet anyways.
Re: Marinating mutton - help
Actually the taste shouldnt be bland ... but like Rupay said , when you do take out the meat , just put some extra spices on it .. coz the spices might lose their intensity due to getting frozen ... ( they usually do )
Re: Marinating mutton - help
Hmm RH actually I was referring to tenderizing it by cooking in a pressure cooker.. I'll rephrase a little..
If I marinate partially cooked(tenderized meat) will it be bland?
TLK I need to use it in small quantities through out the week..
Re: Marinating mutton - help
Masi , My mom used to keep some meat that way .. and I dont think it came out bland .. just make sure you refresh it with some extra spices when you defreeze it to cook .
mm ... u don't need to tenderize meat in the cooker...just use papaya in your marinade..... I usually make it spicy...... and make small packets (using sandwich bags) and bring out each one for use.... do not defrost it in the microwave... leave it out on the counter during the day if you are gonna cook in the night.... and bake or grill
Re: Marinating mutton - help
Thanks CB..I like my food spicy, I 'll do that then :D
Re: Marinating mutton - help
autonme, with papaya it takes less time to cook ? is it some kinda tenderizer? and yea does it effect taste of the end product?
Re: Marinating mutton - help
mm ...it is nature's meat tenderizer...it doesn't affect coz I think u only use 1 teaspoon per kilo of meat... (the papaya is chopped or in paste form) rest meat tenderizers have chemicals in them so I avoid them at all costs... in fact all the tikka masalas u get have some sort of tenderizer in them....
Re: Marinating mutton - help
hmm no i am not using any packet stuff..using some homemade masala.. ok I think I'll give papaya a try.
Thanks..will report back in a few days time.
Re: Marinating mutton - help
what spices do you use and in what quantities?
please post yummy recipes for marinating mutton and chops and tikka!
Re: Marinating mutton - help
nabz I normally use ready made tikka masala..Trying this for the first time..
I didn't have any specific recipe in mind for marination spices so I randomly added whatever came to my mind..but if you are still interested this is what I used
Salt, Red Chilli powder, chilli flakes, garam masala powder, cumin seeds, chat masala, corriander powder, ajwain seeds, turmeric powder, oregano, thyme (I sound like a lunatic now :D)
Just added the quantities by looking (andaza).. swirled it in processor lightly. Just as a rough guess 1 tsp of salt, chillies 1/2 tsp each and rest of the ingredients almost 1/4th tsp each..
