Hi
Does anyone have any recommendations on what to use to marinate chicken drumsticks? Hubby usually puts Shan masala /red chilli and lemon juice but was wondering if anyone has any other suggestions? Preferably spicy
and how long before should the marination be done? We generally leave it a couple of hours. Thanks!

I mix tandoori masala, tikka masala, chili powder, ginger/garlic paste, lemon juice, salt and a teeny bit of vinegar and marinate for at least a couple of hours. The vinegar helps to soften the chicken up a lot !

Yoghurt!! You mix the spices in yoghurt and then put in the chicken. Leave it overnight or for at least 5-6 hours in the chiller. My spices for marination are a bit similar to akaprincess. I don't use vinegar, I use raw papaya paste. Best tenderiser ever without adding in any taste of its own.

^ try the shaan achar masala instead of tandoori masala as the marinade. it tastes GREAT :). you will thank me!

I mix up a lot of stuff if I want something that tastes different and not the usual spicy tandoori chicken:
Olive oil
Worcestershire sauce
Soy sauce
Basil
Smashed garlic
Black pepper
(no salt because the sauces are salty enough)
I marinade for at least two days before BBQing.
Also, I have added some tandoori masala to this in the past with success...but not too much.
I'd also try @nabz idea of the achar masala...that sound amazing...will try that next time.

I normally take a big bowl, add in 2/3 tb olive oil, 2 tb butter 4 tb of yogurt, 3 tb lemon, 1 packet of mixed herbs, chopped up bullet peppers and normal thin green chillis, garlic and ginger paste, tomato puree, salt, pepper, red chilli flakes, paprika, bay leaves, cumin powder, tumeric powder, corriander powder, red food colouring and a bit of that ready made chicken powder mix and paste you can find in desi stores (sorry can't remember the name of it) along with a bit of nandos marinade and normal hot peri peri sauce and mix it all together with the chicken. Leave it in the fridge overnight till 2 hours minumim for the marination time.
Comes out delicious every time and people also ask me how I marinade it so I guess it works for me.
