What are some marinades you guys use for delicious tender meat for grilling?

I think for desi cooking mostly papaya and yoghurt are used as tenderisers :hmmm:

Hmm papaya? how do you use it? Do you blend it and add it to meat? I never knew yogurt is a tenderizer? I thought it was just flavor etc....hmm.

Any specific recipe that is good for grilling meat, like steak so it comes out juicy and well seasoned?

Good read , thanks for sharing. I use commercial meat tenderizer for tenderizing meat and for flavoring , I use desi recipes .

Yes Afro , Papaya , just cut it out like mango .. and then crush it slightly and apply to the meat and leave aside for a good few hours ...

Yoghurt is certainly a tenderizer , though its not as strong as papaya or other tenderizers ... normally its used for softer meat like chicken etc ...

Tamarind is also a good one ... specially when combined with salt ... on tougher meats .. it comes out nice.

One of the best things to do is , tenderize meat with papaya or yoghurt or what ever tenderizing methods you use... dont add any spices ... leave it for a few hours .. then take it out and dry the meat carefully. then apply powdered spices and ginger /garlic as you want ... leave it again for a few hours ... I feel meat absorbs the spices more when applied to it after drying it ...

ok does the meat get the taste of papaya, that's what im afraid of? after leaving it in papaya, do i wash it and then apply spices?

papaya is bs really.. its tenderizing enzymes kick in only when its warmed, like in a stew/salan, and not on the grill. and even in the stew, it'll turn your lovely cut of meat into what looks like overcooked mush if you add too much. just get a tender cut of meat to begin with..

and i havent seen any chicken in the US thats needed any kind of tenderizing.

afro, you can wash the excess of it .. waise it doesnt have a strong taste that will overpower your dish .. Queer is right , to some extent it starts taking affect when you cook the food ... so keeping some in the marinade will actually help make it tender ...

I have never found the taste any different then the usual meat dishes .. so i would say you try it the first time without washing it out .. and if you find that you dont like the taste , next time remove the most past and just leave a spoonful in for the cooking process .. that should help.
