Maybe u can make mango chutney from tinned stuff. However for achaar / pickle, u would need GREEN mangos, as in unripe.

My dadi used to make them. And as Halwa said, you'd need green mangoes for it. I vaguely remembered the mangoes cut in small lengthwise slices.....being dried in the sun......and then preserved in oil and a mix of spices for some time.......before they were ready to eat.
I like the commercial variety better. Just go by the jar!

yes we have a mango tree, they grow immature mangos that are alittle bitter in taste is that what i need, ok. so say i have those, what to do?

Cut the green mangoes into small pieces (do NOT peel). Then salt them GENEROUSLY in a non-metallic bowl, leave overnight. (Mangoes should be hard and sour).
Next day drain and pat dry within tea towel.
Sprinkle with a mix of red chilli powder, fenugreek (methi seeds) powder, possibly one or other of the following: fennel seeds, kalonji, haldi. Something like that, I'm not really sure of the spice combo's. Stir.
Then heat up some oil (like sunflower?) and when hot, add the mango. Stir until heated through (for sterilization sake and to rpast off the spices a little), then transfer immediately to sterilised jars. Make sure fill to brim and cover with a good layer or oil.
Store in a dark cupboard or fridge for a couple of weeks. Then enjoy eating them.
U can also add green chillies / carrots / lemons etc to the mangoes when u salt them, but bear in mind the lemons may be VERY bitter.

ok i know im gonna sound like an idiot but does anyone know what lassoray ka achar is ?
If yes, what do u call lassoray in english :D I am trying to find this achar here in toronto..but havent had any luck so far.
