I had mango chicken at a malaysian restaurant the other day, it was so delicious, I thought I’d try to make it today. It turned out great, here’s the recipe, try it -
You need boneless chicken for this.
Heat oil in frying pan; add chicken pieces and brown them. Pour off excess fat. Add some garlic-ginger paste and fry. Add julienned red peppers, I also threw in asparagus shoots coz I love those. Now add red chili-garlic sauce (the vietnamese one, available at most chinese grocey stores). Add salt to taste. Cover and cook on low until almost tender. Add mango and cook 10 more minutes.
Garnish with toasted sesame seeds.
Thanks, it was different in a good sort of way, a little crunchy, and with none of the usual desi spices. I used almost ripe mangoes so that it wasn't very sweet. The recipe called for 1/4 cup of pineapple juice and a little soy sauce too, but I decided to omit those coz I prefer my food on the spicy side.

While you’re around, let me tell you, I bought the lipocils on your recommendation, and it’s working GREAT for me. I lost a few lashes from an eye infection a few years ago, and I have always been conscious of it, but now 2 months later, I can hardly tell!

Sehar - hey, how are you? Alhumdulillah everything is great here. Things didn't go quite as I'd planned, my company sold our division, we were all going to be laid off May end, so I was busy job-hunting. I found something better and took a week off to go unwind before I start the new job. Anyways I'm always trying new stuff in the kitchen so hopefully I will be around :)
