i never knea the dough with corn meal and its roti but now i want to make help mi plz

here u go the recipe i found.

Ingredients
1. 2 Cups Corn Meal ( Maki Ka Atta )
2. Water 1 cup
3. Oil or Butter 1 table spoon
4. Chopped Methi leaves 2 Table Spoons ( or use 2 table spoons of Dry Kasoori Methi leaves)

Method:
1. Heat the water to boilig.
2. Take a mixing bowl and add the Maki ka Atta and make a well in the centre als add the SALT in it.
3. Add the boiling water in it.
4. Mix the dough with a wooden mixing spoon.
5. Also add the Methi leaves in it
6. Once it cools down knead it with hands.
7. Now rolling this into Roti is a challenge as you can not use dry flour for dusting so it will tend to stick to the surface.
8. Make a ball of the dough and try rolling it with a pin to give it a circular shape and then expand it b patting it by hands.
9. The thickness of the roti should be like a Pan Fried Pizza Base.
10. The Size should be about 6 inches in diameter.
11. Put in to a heated Tawa or a fry pan and cook.
12. Turn sides when golden brown.

Serve the Maki Ki Roti with Dahi ( Yogurt) and some ginger pickle.

The trick is to add loads of ghee or butter itno the dough .. and then dont flatten it to large … should be small so you can handle it … dont use the roller pin on it .. just do it flat with your hand…

I normally flatten it on a foil paper , its easier to get it off the foil paper and onto your hands , rather then from the worktop ..

use water to deal with the dough until you are ready to put it on the tawa …

Well ... I have heard about a cheating way to do it and that is by adding 1/10 portion of normal flour to the dough. It won't taste any different because 90% is still makkai ka aata and its a lot easier to make a roti shape out of it. At least thats what dadi told me

Apart from the methods given above, I sometime make meethi makai ki roti but I don't use dough for it... instead I just make a thick batter with makai flour, milk+water and shakkar(brown unrefined sugar). Basically you cook it like pancakes. Spread the batter in a slightly oiled non-stick pan and flip n cook.

It saves me the trouble of kneading and trying to keep it in one piece while rolling out.

Masi , wow now thats an interesting technique.. do they come out nice and crispy? I mean do they not chipko with the tawa or the frying pan?

Yup CB, always come out good. .. and I don't know about a regular tawa or pan but it doesn't stick to an oiled non-stick pan.
