forget any sort of peeler or knife for your ginger...use a spoon.... the skin just slides off....it works like a charm..ever since I heard of this tip I have been using it.

Another thing I do, since I don't like ginger garlic paste from the store (too many preservatives) ... I simply take equal quantity of ginger and garlic... peel and grind them to a paste. I pour a little olive oil in a jar ....pour the ginger garlic paste and then pour a little more olive oil on the top... this jar i keep in the fridge and it stays fresh for a month or two. The other half I put in ice cube tray and then put them in a ziploc bag.

Makes cooking a breeze and no more ginger and garlic pieces in my or anyone else's mouth.
