How many of you have tried making jalebis at home?
Yesterday, I was roaming the aisles of this desi shop and there was this packet mix for Jalebis. The directions at the back didn’t sound too complicated, however I was not sure how will the liquid dropped into the karahi. In Pakistan, the jalebi-makers use thick cloth, which has a hole in the bottom, and they make the round and round shape of the jalebis while pouring the liquid in oil.
Any one, any ideas?
I have never tried making these jallebies at home…but I think Faisal Bhai put that paste 4 jaleebi ..in an icing tube with which we decorate cakes…and then with the help of this icing tube..drop that paste in karahi…I think then u can make jallebi like jaleebi…
you may use the cake decorating squeeze bag, form used for cream or you can do this ...

Ingredients
200 gms. plain flour (maida)
20 gms. gram flour (besan)
200 gms. sugar
few drops yellow colour
2 tbsp. milk
ghee to deep fry
a plastic easy squeeze bottle
Method
Sieve 100 gms. maida and besan together.
Make a batter using warn water.
Keep aside for 24 hours.
Add remaining maida and food colour and more warm water if required.
The batter should fall easily when poured - Not too thick not too thin.
Keep aside.
Make syrup of the sugar by adding water and boiling.
Add the milk and all the scum to form while boiling.
Make one string syrup. Strain.
*Fill bottle with batter. The nozzle should have a hole the thickness of a knitting needle. *
Heat ghee well in a shallow frying pan and form jalebis in the form of concentric circles about 2 inches on the outside.
Fry till crisp, drop into hot syrup. Drain with a perforated spoon, serve hot.
Makes: 30-35 pieces
I am sorry, I am not jalebis fan, i cannot overcome myself to eat them .. they are just too sweet ...
Faisal I always use a funnels it works great, or use a pipping bag.

What are these two?
I kinda like the idea of using a cloth, cz in that case the palm is used to squeeze the liquid out and hand motion can make the shape. With sqeeze bottles, it will be fingers squeezing to bring the liquid out. Not sure if it will be as easy.
Making jalabi is an art.
i tried 'em once ....though they weren't as great as available on mithai shops :)
but i used piping bag n it really went well .....:)
piping bag is a triangular bag with a hole in one corner ....at this corner u fit the nozzle of ur choice n squeeze just like mithai walas squeeze their muslin cloth :)
