chaaTi is the big eartern pot which is used to kaaR(slow boil) the milk all day long(so some times it is also called kaaRni), milk is given "jaag" at night, it becomes yogurt by morning when some chooRay and jhaanjraN wali churn it in the chaaTi with a madhanee to make makhan and lassi.
chaaTi is also used to make achaar, or store some other stuff in the household like chaul, guRh etc...poor man's storage shelf.
Waris Shah mentions it in Heer as following while describing the monring sounds and scene in the village:
chiRhi chookdi naal uTh ture paandhi(traveler),
paiyeaN chaaTiyaN wich madhaaniyaN jee.
Now you must appreciate how matsui qualifies as a chaaTi compared to madhanee.:)

Hoblu is the first milk a cow gives right after birth and it's very thick and creamy. It's also called colostrum I believe and is considered important for the immune system. Apparently they drink it back home, I think that's kind of gross. insert green sickened smilie
oh that...we call if "bauHli". First one is very thick and can be boiled into a thik khoya like paste. Usually it is given to kids or old people to improve their immunity and health.
the milk starts getting normal after 10 days or so....the first 10 days usually people boil it and add some sugar to it...it used to be very tasty but last time I ate it during my visit , I did not really like it.
