Question to the experts…

My chicken had good flavour but the chawal for some reason was a little bland - any tips?

tip:
1.bring water to boil and then add soaked rice.
2.Boil the rice until they are almost done but it should not be completely tender as rice will be fully tender in daam).
3.drain water
4.mix rice and cooked chicken
5.then Cook(damm) on low flame till 15 mins

when boiling the rice, add a pinch of salt. And yes the 'daam' trick is also good! Use a cloth to cover the handi and the place the lid on top of the cloth!

I have always felt that if I add a lil extra salt to the biryani rice when they are boiling,they taste better.I add a lil more as compared to what I will use for the same amount of rice,when I am making plain boiled rice or pulao.

That's right.. By adding a little butter & salt to d boiled rices brings flavour.

But the biryani luks awesome!! Well done.

yup like chips said , add a bit of salt as that really changes the entire taste in the biryani rice ..

Also while boiling the rice , add in a bit of zeera and some cloves .. that will also help it get some taste and wont taste totally bland ..

Waise one of the reasons for rice to taste bland in biryani is the proportion of the masala and the rice .. perhaps the rice was more then the masala and hence the taste isnt as balanced .. try to do more masala next time ..

We season the rice so that it’s not just boiled white rice.

I seasoned the rice.

I think it was a lack of enough salt and too little masala in the chicken

^ The salt is supposed to be a bit "taiz" so that when you taste the paani you actually taste the saltiness. If you can't tast the salt, it's not enough.

Soak the rice for 30 minutes,

  1. bring water to boil, add salt and then add soaked rice

Here are few things to remember when making biryani/pulao
1) Ratio of rice and chicken
4) Your masala was very watery. Biryani masala does not need water. It should only be bohnifed in lots of tomatoes and yougrt.
2) Salt generously. Rice need good amount of salt to absorb the flavor.
3) Always damm rice dishes
