What are the rule of making plurals. I remember s and es and ies… but what is special with macroni, shrimp and hair?

These are "countable" nouns. For example, if someone has a platter of fried shrimp and asks you if you would like some, you would say "Yes, I'll take 2 shrimp please".....to add an "s" on the end and say "2 shrimps" would be redundant and grammatically incorrect.
The same goes for hair. It's countable. The threads we see here that all start off as "My hairs are dry" "How do I oil my hairs" etc etc are incorrect grammar. You could correctly say I found 2 hair on the pillow, but when referring to what's growing out of your head, it's all hair.
"Macaroni" actually** is *already the plural form. The singular form is "macarono", which would be used if you were serving on singe elbow shaped pasta, but because this type of pasta is small in size, you wouldn't serve a singe piece, that is why "macaroni" is used. If you've ever been to a upscale Italian restaurant, you'll often see "Raviolo" as an appetizer...this is the singular form of "Ravioli" which is more well known. "Raviolo" are larger, singular portions. "Ravioli" is plural. And that is why you do not add an *"s"** onto the
end of Macaroni.

Mera khyal hy khudh yeh words jama hain, like ek bal ko hair nhi khety sary baalon ko he khety hain same for macroni, collective noun hain. My opinion only

Hair:
People, the plural of hair is not hairs. Please use “hairain” or “hairon”
Shrimps:
An “s” is only added at the end for land dwelling animals. Example: Chimp will be chimps. But since shrimp are water dwelling creatures…the same rule does not apply. The plural of shrimp is “shrimpian”. Notice how there is no “s” at the end, so we are in keeping with the above rule. :k:

Sharkian, dolphinian, eelian and whalian. Duh. 
But since rules are meant to be broken, sharkaan..dolpheenain…eelain…whalain also work…and are more easier on the tongue and the ears.
