macaroni and cheese

does anybody have a good macaroni and cheese recipe?? i need a creamy one…i’ve heard that sour cream makes it creamy like those served in a restuarant?

Re: macaroni and cheese

Macaroni and cheese? NO, NO, NO, NO, NO!!!!

It should be Crackers and Cheese.

crackers? macaroni and cheese is comfort food sir i suggest u abandon those crackers.

Re: macaroni and cheese

I love macaroni and cheese, I hate how in the homemade macaroni and cheese it becomes dry if not served immediately. making it creamier would help keep it wet...

I am not sir, i am madame.... Abandon the cheese n crackers? NEVER!

Re: macaroni and cheese

Back to the topic, surely u can add normal cream also, rather than sour cream?

First tell us how u make your mac n cheese normally, then someone can identify why it's dry.

Re: macaroni and cheese

Mac and Cheese.....

I make a béchamel sauce, add whatever cheese i have in the fridge, add boiled pasta, mix around, put it in a baking dish, sprinkle with cheese, bake in the oven (or pop under the grill) et voila.

Oh, and serve it with a salad, just to make it look healthy. :)

Re: macaroni and cheese

^

how do you make your béchamel sauce? what ingredients and amounts do you add?

thanks :)

Re: macaroni and cheese

ooopppsss sorry madam Rupay!!!!

i make it with bechamel sauce too.... turns dry

Re: macaroni and cheese

i Guess you should add more sauce, also use cheese that are more creamy. Also, I think for mac and cheese it is better that the sauce is slightly thin because when you add cheese, it does thickens out. So my advice would be choose a creamy cheese and use more sauce.

Re: macaroni and cheese

I make a really nice mac-n-cheese but do not bake it. Baking tends to dry it out. Heres my recipe:
In a medium saucepan, melt 3 tablespoons butter. Slowly, slowly stir in 3 tablespoons of flour with the flame at medium. When it turns pasty, slowly, slowly add 2 cups of milk, stirring constantly. Once the mixture is smooth, add shredded cheddar. I use one large bar of sharp cheddar and grate it myself, it just seems to taste better than the pre-shredded cheddar. Never stop stirring! Add some ground pepper to taste. It will take 20 minutes or more for the sauce to thicken. Once it reaches desired consistency, pour the cheese sauce over cooked elbow macaroni, stir well and serve. My mom sometimes would add a little extra sauce and sprinkle the top with bread crumbs and parmesan and then bake it till just browned on top. Enjoy!

Re: macaroni and cheese

The last time I mad mac & cheese I made the sauce as described as above but also added sour cream as I needed to use it up. I baked it in the oven until the top was nicely browned. It came out really creamy. So sour cream is woth a shot.
