One thing my niece and I have in common is our love for mac n cheese! There is NOTHING so amazing as gooey, cheesy, mac n cheese in the winter with a good movie!
Do any of you know how to make really good mac n cheese from scratch? I can work with the box pretty well but home made is always so much better!
Make a roux - melt 2 tbsp butter on medium heat. Add two tbsn of all-purpose flour. Bhoon this until it starts to smell nutty. This has to be bhooned well, otherwise it'll taste of raw flour. If you bhoon it too much, it'll darken and the colour won't be nice.
While you're mixing flour and butter, heat milk in microwave so that it is warm. Add warm milk this to the roux. Mix, mix, mix with a whisk on medium heat - you don't want this to become lumpy.
After this has thickened a little, add lots of shredded cheddar cheese to this mixture. Melt cheese through. Season with salt, black pepper, paprika (I like hot paprika) and some mustard. Season with anything else that may appeal to your palette (I've added ketchup to this in the past). You can add other cheeses as well like gouda or mozarella, but it should be primarily, cheddar cheese. I also like to add some cream cheese to this - makes it creamier!
Once the cheese mixture is combined, add boiled pasta, place in baking dish, top with bread crumbs and bake. Voila!

I like this thread. I've missed out of the box mac and cheese dinners since moving to Pakistan, I'll be trying out Sehrysh's recipe when I get the time :)
Also mac and cheese by M&S IMO is the best one I've ever had, if anyone knows a specific recipe for that particular taste, please post it.

You want to serve the Mac and Cheese fresh - the longer it sits on the stove top, the more it coagulates - serve it fresh off the stove and it’s really nice and creamy - obviously you want to omit the breadcrumbs in the non-baked version.
One other tip - if you’re re-heating it after refrigerating it and you want to get that creamy texture back, nuke it in the microwave, then throw it back in the pot and add more milk and heat on stove top until the milk cooks and the mac and cheese is warmed through.
my reciepe is the same as sehrysh, but I make 2 different varitions, in one I ADD CHEESE TO THE MIXTURE AND add that to macaroni and in the other one I JUST ADD the flour misture to the macaroni and top that with cheese and bake. BOth turn out different and yummy...I AM MAKING ONe tomorrow for sure..
My kd wont anything but mac n cheese, i make it exactly how Sehrysh suggested, and remember Mac n cheese wont taste the same if you DON’T add mustard powder, so please do add that each time but with mozzarella i find it makes it taste realy bitter so try parmesan instead! Btw I am having some as i write this
