Lunch Menu Ideas Needed

Okay so its a lunch menu I need to plan for about 10-12 people

I’d like it to be non-desi or maybe with a bit of a desi twist is fine too.

Easy dishes as I won’t have a lot of prep time, this will be day after Eid.

Baked chicken
Pasta salad
Spinach, blueberry and pear salad
Roasted potatoes
Sandwiches (maybe)

I need to know if this is sufficient?

Should I not do sandwiches as it makes it more casual?
Should I add a soup somewhere?

Dessert…total loss right now.

Do some sort of pasta bake instead of sandwiches and orzo or quino or bean salad instead of pasta salad.

You can do triffle, fruit custard, mini muffins with ice cream/ Ice cream bar.

Agree with Lusi. You have two salads…when one is more than enough. You can replace the pasta salad with a main course pasta dish such as lasagna, or ziti or spaghetti, etc…something easy to make. I’ve made the online revipe for the Sbarro’z zitt…and it’s just mixing ricotta cheese with seasoning, marinara sauce, coat the pasta,add shredded cheese…and set to bake. Very little prep time. Or you can do any pasta dish you find easy…it doesn’t even have to have an italian flavor to it. The pasta can have a Desi flavor or a Chinese one, etc.

^That way…you’ll have two hearty main dishes for lunch: baked chicken and pasta. You’ll have a salad. You can keep the roast potatoes. The sandwiches…imo …aren’t necessary as the rest if the meal if pretty filling. But if you want a bread item do rolls instead…get some premade Pillsbury ones and bake; saves time. They’ll make a nice accompaniment. Or get a loaf of french bread or garlic bread from the supermarket and cut loaves and put em in a basket.

Or totally replace sammies with soup. So, then your menu will include 2 main dishes, a salad, roast veggies, and soup. That sounds balanced. Or cut soup out and replace with a bread. Or if the bread is easy to get…then have soup AND bread.

For dessert… Bake some brownies. Get the box mix…it can be a really decadent/rich variety like Girardelli’s brownies. Get a tub if ice cream. A bottle of chocolate/caramel syrup. And have people assemble their own Sundaes. The only thing you’ll have to is bake the brownies. Saves time.

Lovvvvvvvve the pasta bake idea guys! I think I’ll do that and take out the sandwiches. I didn’t know the ziti recipe was so easy either. I think that’ll be a nice addition the main dishes.

My mom is insisting on something desi.

I love desi food. But by the time Eid rolls around, I will have had my fill of it (back to back Iftars these days, Sehri gatherings and Eid day will be a ton of desi food) so I’d rather switch the menu a bit and do non-desi.

And I think the fruit custard will be perfect.

And I cannot believe it but my return key works on this site again! LOL
