Lunch and Light snacks for work

Please share some quick and easy recipes for light lunch/snack for work. My husband does not want a sandwich daily, and i’ve become pretty innovative with salads lol but something new would be interesting :slight_smile:

Pasta salads with an olive oil based dressing are excellent for lunches. Add shredded chicken or grilled steak the morning of, and its a delish meal.

Soup and salad is great too. Make a batch of soup and freeze it in individual size cups.

Rice (biryani, pulao, chinese fried rice, etc)

He can also take left overs of casseroles

pizza, noddles, chicken nuggets, fish nuggets, sausages role, chicken role made with frozen parathas! :)

make a mix of nuts and dried fruits yourself. I have a lil container of dates (left over from Ramadhan), almonds and dried cranberries at my desk, and a pack of nimko for afternoon chai .

My husband is a doctor, although I give him in lunch for work whatever we eat at dinner time, but he prefers rice, noodles, Pizza or dry stuff to be taken usually. Salads does not make his appetite fill. Try just altering things with the stuff you already making. Noodles i guess are best to give, chicken roast, Fish cutlets/fish fried fillets, Shaami kababs, Potato cutlets, spring rolls etc can also be tried

Oh wow those were lots of good suggestions :) I do give him left overs from dinner too, infact he actually asks for them lol but that can only be done for rice stuff as he does not want to be seen having salan roti at work:p Will try making individual cups of soup as i do make soup pretty often...spring rolls and macaroni salad are next on the list :)

Can I make something using dry fruits? Peanuts and all?

I put almond flakes and cranberries/raisins to liven up green salads. Healthy, light and tastes good. Also sliced boiled egg on salads. orange segments, or a spoonful of channa/cholay , rinsed kidney beans. They all add protein/fruit to a healthy salad.

Bar-b-que Chicken Salad

Recipe Ingredients

  • Chicken (boneless) 300 gm
  • Red chili Powder 1 tsp
  • BBQ Masala 1 tbsp
  • Garlic paste 1 tbsp
  • Lemon juice 1-2 tbsp
  • Oil 2-3 tbsp
  • Salt to taste
  • Coal 1 piece

For salad dressing

  • Garlic (chopped) 2-3 cloves
  • Soya sauce 4 tbsp
  • Lemon Juice 2 tbsp
  • Black pepper (crushed) ½ tsp
  • Olive oil 2 tsp
  • Salt to taste

To prepare salad

  • Onion 2
  • Cucumber 2
  • Tomato 3
  • Carrot 3
  • Garlic cloves (chopped) 2-3
  • Salad leaves/ Ice berg 6-7

Recipe Method

  1. Take chicken in a mixing bowl; add in 1 tbsp BBQ sauce, 1 tbsp garlic paste, 1-2 tbsp lemon juice, 1 tsp red chili powder and salt. Mix it well. Put the mixture on the chicken.
  2. Take 2-3 tbsp oil in a cooking pan; fry the chicken in it till its color changes. Remove it from the flame and give it a coal smoke.
  3. To prepare dressing, take 2-3 garlic cloves, 4 tbsp soya sauce, 2 tbsp lemon juice, ½ tsp crushed black pepper, 2 tsp olive oil and salt in a mixing bowl and mix it. to prepare the salad, take 3 carrots, 2 onions, 3 tomatoes, 2 cucumbers, 6-7 salad leaves and 2-3 garlic cloves. Add in BBQ chicken, add the prepared dressing.
  4. Mix everything together and serve it in a salad platter.

Recipe Ingredients

  • Whole wheat chapattis 4
  • Oil 2 tbsp
  • Onion 1
  • Capsicum 1
  • Tomatoes chopped 2
  • Turmeric powder 1 tsp
  • Ginger-garlic paste 2 tbsp
  • Tomato puree 2 – 3 tbsp
  • Cottage cheese 1 cup
  • Salt to taste
  • Red chili powder ½ tsp
  • All spice powder ¼ tsp
  • Coriander and mint chutney 2 tbsp
  • Yogurt 1/4 cupFresh mint leaves to serve
  • Onion rings to serve
  • Chaat masala to serve

Recipe Method

  1. Heat oil in a non-stick pan. Slice onion and add. Chop green capsicum. Add tomatoes, turmeric powder and ginger-garlic paste to the pan. Mix well and sauté for 2-3 minutes.
  2. Add tomato puree. Mix well and cook on high heat for a minute. Add capsicum, cottage cheese, salt, red chili powder and all spice powder. Mix well and cook till done.
  3. Place a chapatti on a worktop. Mix mint-coriander chutney and yogurt and spread a spoonful of yogurt-chutney evenly on it. Place a spoonful of the vegetable filling on one side of the chapatti. Sprinkle a few fresh mint leaves, onion rings and chaat masala on top. Roll the chapatti tightly. Make other rolls similarly.
  4. Cut into halves and serve immediately
