“Spanish omlette” with pumpkin and halloumi.
This is a recipe from the BBC good food site.
• 2 tbsp olive
• 175g halloumi cheese , sliced
• 500g pumpkin or butternut squash , diced
• 2 red chillies , seeded and finely chopped
• 1 garlic clove , finely chopped
• 2 tsp cider or balsamic vinegar
• small bunch mint , roughly chopped
• 6 eggs , beaten

Heat half the oil in a large frying pan. Cook the halloumi for 1-2 mins on each side until golden, remove from the pan and set aside. Add the remaining oil to the pan, then cook the squash for about 10 mins, until soft and starting to colour. Add the chilli and garlic and cook for a further 2 mins. Pour over the vinegar, then put the halloumi back into the pan, scatter over the mint and pour on the eggs. Cook for 5 mins until the base is set.

Heat the grill to high. Flash the omelette under the grill for 5 mins until puffed up and golden. Serve immediately or allow to cool and serve cold with a salad if you like.
You can use any veg in place of the pumpkin (I think spinach or asparagus works well), and omit the halloumi and vingear. You can also use any other herb in place of mint.

**Feta red onion crustless quiche
**2 red onions
Oil
100g feta
sprigs of thyme
12 eggs
120ml double cream
Caramalise the onions in some oil
Place onions in a bowl and crumble the feta into bowl, add the thyme
Beat the eggs, and add to feta and onion mixture with cream, and mix.
Place in a shallow oven proof dish, or small muffin cups for handy portions and bake at gas mark 5 for about 20 mins until golden brown and puffed up - keep an eye on it though.
This make a lot - but freezes well, so is handy for lunches.

**Salmon and Feta Bake
**This would work with smoked mackerel too.
Small fillet of hot smoked salmon
Half a pack of Feta
Two large free range eggs
1/4 pint double cream
Steamed broccoli florets (about 8 very small)
Mixed tablespoon of chopped parsley and dill
75g strong cheddar
Flake the salmon into a shallow oven-proof dish.
Cube the Feta and sprinkle that, the broccoli and herbs over and around the salmon.
Grate over 50g of strong cheddar.
Whisk the eggs and cream together and stir in.
Grate over the rest of the cheese.
Bake at gas 5 for 25-30 mins until golden brown and puffed up.
Serves one greedy person with a salad on the side

Nargisi kofte (not an authentic recipe, but works well)
Makes 4
250g finely minced lamb (or beef, or chicken)
Ground almonds (enough to bind)
1 onion chopped finely
6 chillis chopped finely
4 eggs
1 tbsp chopped coriander
1 tbsp grated ginger
1 tsp cumin seeds
1/2 tsp chilli powder
- Hard boil eggs, and shell
- Place minced lamb in processor with other ingredient (start with a table spoon of almond), and process until smooth3. Split dough into 4, wet hands and shape ¼ of lamb into a ball
- Take the ball flatten and place egg in the middle and fold edges and roll till smooth and fully sealed.
- Either shallow fry, deep fry until golden. You could also brush with oil and grill.
For a crispy coating mix ground almonds, and grated parmesan, then dip the kofta in egg and coat with almond mixture before frying. You can add other spices and herbs to the almond mixture to vary.
