Low calorie meals/swaps

Any ideas on great recipes on low calorie meals for us who would like to eat healthy? Give your ideas here on how to substitute certain things in regular meals to make them low calorie whether they be American dishes or Pakistani. I’ll start us with two recipes

Wrapper’s Delight

                               you can make this low-cal version of a Taco Bell favorite at home. cuz 1. some of us eat halal and the "taco bell" version is haraam and 2. taco bell version has 530 calories and this has waay less!!

Ingredients:
1 large La Tortilla Factory Smart & Delicious Low Carb/High Fiber tortilla
3 baked corn tortilla chips (like Guiltless Gourmet’s Yellow Corn Tortilla Chips)
1/4 cup white chicken breast in small pieces with skin removed
1/4 cup shredded fat-free cheddar cheese
1/4 cup shredded lettuce
One-third plum tomato, diced
1 tbsp. fat-free sour cream
1/2 tsp. dry taco seasoning mix
2 dashes cayenne pepper, or more to taste

Directions:
Using a fork or knife, break up the chicken so there a re no large chunks. In a small microwave-safe bowl, combine chicken, cheese, taco seasoning mix, and cayenne pepper, and mix well. If you like, season to taste with extra cayenne pepper. Microwave for 30 seconds, or until cheese begins to melt. Set aside.

Warm the tortilla in the microwave for 10 seconds (making it easier to fold without ripping), and then lay it out on a flat surface. Place the chicken mixture in the center of the tortilla. Flatten the mixture into a circle, keeping it about 2 inches from the outer edge of the tortilla. Next, layer the tortilla chips on top of the chicken mixture. Evenly top with sour cream, lettuce, and tomato.

FOLDING INSTRUCTIONS: Starting at the bottom of the tortilla, fold edge up a few inches to the tortilla’s center. Then, going around the edge of the tortilla, repeatedly fold, overlapping sections to meet in the center for a total of about six folds, until filling is completely enclosed. (Trust us, it’s easy!)

B ring a pan sprayed with nonstick spray to medium heat, and carefully place the folded tortilla in the center of the pan with the folded side down. Heat for 4 - 5 minutes, until the tortilla is browned. Carefully flip it with a spatula, and heat for another 30 - 60 seconds. Now chew it up!

Broc ‘n’ Roll!

                               SOUP. Blend up a bowl of this cheesy-broc creation..

***Ingredients:
***1 tray Green Giant Just for One! Broccoli & Cheese Sauce
1/2 cup light (plain) soymilk
1 wedge The Laughing Cow Light Original Swiss cheese, chopped into pieces
salt and pepper, to taste

Directions:
To prepare Broccoli & Cheese Sauce, pull film back slightly to vent. Microwave for 1 1/2 minutes. Pull film back all the way (but do not remove), and stir in cheese wedge pieces. Place film b ack over the tray, and microwave for an additional 45 seconds. Mix well, and allow to cool slightly. Place broccoli/cheese mixture in a blender with soymilk. Blend at medium speed until desired consistency is reached (blend very briefly if you like broccoli pieces in your soup – blend longer for fully pureed soup). Transfer soup to your favorite microwave-safe bowl (or your second-favorite one, if your fave isn’t clean). Heat soup in the microwave for 45 seconds, or until hot. Season to taste with salt and pepper. Then slurp it up! MAKES 1 SERVING

We as people need to eat healthy and exercise not only to look good but also so we can feel good and prolong our life significantly.

hmm--i use low cal butter instead of oil :) but i usually mix it w/ a little olive oil---but this never taste like my mom's food :(

^haha, I know what you mean. We'll all never be as good as our mothers. Okay, not all but I know I'll never be. She's known as an awesome cook but I learned to cook from my naani whose not so bad but she taught me all high calorie deserts and salaans with oils. :-( But I'm trying to eat healthy now so we'll see how it goes. As of yet, I have not made any healthy foods but will when the winter is over and my mood is up :-) At this time I try to keep the oil/butter low in my foods and I usually eat wheat bread while the hubs gets to eat chaawaal. Once in a while I eat chaawaal too. I soak it in water for an hour or more and then drain the water onto a paper towel. This soaks up the excess starch thus making the rice less caloric.
