Re: Little Xmas food boxes for work colleagues

one of our customer brought us a home made jam bottle..with this cute blue ribbon..
its yummy too..
and oh ..one of our oldddd customer..brought my dad this box tht she made..she calls it a secret box...basically a box..to keep like a key or something..it looks old too..but i love it..!

Re: Little Xmas food boxes for work colleagues

Thanks Aaana but i am kind of looking for edible lil sweet nibbles to put in these boxes. For example, i am very keen to try out the choc truffles that somegroovychick told us about.

Anymore suggestions would be appreciated!

Re: Little Xmas food boxes for work colleagues

i don't know about how her truffles turned out, but mine were sticky even after putting them in the freezer overnight. so i don't know how they'll last in your little xmas box.

they tasted heavenly though.

Re: Little Xmas food boxes for work colleagues

perhaps some chocolates?

My sister used to make homemade baklava and put about 10 of them in christmas colored muffin foils (not sure what they are called) then she would put them on a tray (the disposable kind of course...comes in christmas colors as well) and then wrap it with colored saran wrap. She would present each tray to her co-worker....they loved it!

Snowball Truffles Recipe

1/3 cup plus 2 tablespoons heavy cream
1/4 cup unsalted butter
1 teaspoon almond extract
12 ounces high quality white chocolate, divided
1/2 cup powdered sugar, sifted
1 cup shredded coconut flakes

In a bowl, add and heat the cream, butter, extract and 8 ounces of the white chocolate in microwave at medium power at 30-second intervals. Make sure to stir in-between intervals to avoid scorching. Continue on 30-second intervals, stirring in-between until chocolate is smooth and melted. Fold in the sifted powdered sugar. Cover bowl and pop it into the refrigerator for about 1 1/2 hours.
Place a cooling rack over 1 baking sheet. Cut a piece of parchment paper to fit the inside of another baking sheet. Melt the remaining chocolate in the microwave. Take out the cooled and semi-hardened truffle mixture. Using a tablespoon, scoop out enough to make a ball, about 1- ounce in size. Lay the ball onto the rack. Continue the process until all of the truffle mixture is gone. You should have about 16 truffles.

Using a pastry brush, "paint" on the melted chocolate and place on the parchment covered cookie sheet. Designate a hand to use only for the sprinkling of coconut. Before moving onto painting the next truffle, use your "sprinkle hand" to decorate the truffle. Continue alternating between painting and sprinkling until you are done. Refrigerate for 1 hour.

i think this will be a cute idea for ur christmas boxes!

Re: Little Xmas food boxes for work colleagues

I would put a mix of savoury bits - i.e. wrap mini pakorah, samosa, springroll and mini kebab in greaseproof paper and add a little tub of chutney sauce - they'll love it!

Re: Little Xmas food boxes for work colleagues

ginger bread men? the cookie kind ...

Re: Little Xmas food boxes for work colleagues

Hmmmmm- not sure about the greasy stuff - it will leave too much oil - i think truffles is not a good idea either now as namkeen said they could get soft! Mini cakes with icing on the top perhaps? Sum colourful biscuits? I need to give a wow factor people and somthing that they will remember me by as i will quitting in April - mwahahahha!!! (evil cackle)

Butter and Jam Thumbprints

1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon fine salt
3/4 cup unsalted butter (1 1/2 sticks), softened
2/3 cup sugar, plus more for rolling
1 large egg
1/2 vanilla bean, seeds scraped from pod, or 1/8 teaspoon vanilla bean paste or 1 teaspoon pure vanilla extract
1/3 cup raspberry, cherry or strawberry jam

Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone mats.
Whisk the flour, baking powder and salt together in a bowl.

In another bowl, whip the butter and the sugar with a hand-held mixer until fluffy, about 5 minutes. Beat in the egg and vanilla until just combined. Slowly beat in the dry ingredients in 2 additions, mixing just until incorporated.

Scoop the dough into 1-inch balls with a cookie or ice cream scoop and roll in sugar. Place about 2-inches apart on the prepared baking sheets. Press a thumbprint into the center of each ball, about 1/2-inch deep. Fill each indentation with about 3/4 teaspoon jam.

Bake cookies until the edges are golden, about 15 minutes. (For even color, rotate the pans from top to bottom about halfway through baking.) Cool cookies on the baking sheets. Serve

Creamy Pecan Pralines

1 cup light brown sugar
1/2 cup granulated sugar
1/2 cup heavy cream
4 tablespoons unsalted butter
2 tablespoons water
1 cup pecan halves

In a heavy-bottomed saucepan, combine the light brown sugar, granulated sugar, heavy cream, butter, and water. Place over a medium-high heat and stir constantly until the pralines reach the softball stage, 238 to 240 degrees F. Add the pecans to the candy, and pull the pan off of the stove. Continue to stir the candy vigorously with a wooden spoon until the candy cools, and the pecans remain suspended in the candy, about 2 minutes. Spoon the pralines out onto a parchment or aluminum foil lined sheet pan and cool completely before serving.

Re: Little Xmas food boxes for work colleagues

Smooth_guy - are you really a guy? You do baking?

I was thinking of making the jam biccies plus some with coconut, some lil fairy cakes with lemon icing on top with silver balls. My boxes are small - about 10cm square so not much will fit in there - its the thought that counts!

Thank you!

Re: Little Xmas food boxes for work colleagues

How about just picking up some nice mini gourmet cookies from local bakery and adding a few to each box? Or making sugar cookies shaped like x-mas trees and decorate them with edible silver bells...etc

I recommend baklava. It can stay out side for a day or two without getting spoil. Let me know if you are interested I can post the recipe (it is not that hard to make).
I tried mini chocolate orange cake yesterday and it came out gr8 (took only 15 mins to prep; 45 mins for baking) that is something you can put in a box as well
