Light Luncheon Menu

I need some ideas for a light summer luncheon menu for a group of desi ladies. We don’t want anything heavy, as it’s a “working” lunch, but I’m not sure what to serve. Biryani just seems too heavy for summer. Any ideas?

Turkey Sandwich, Greek Salad and Tomato Soup and a glass of Fruit Juice (orange, grape, or grape-fruit)

M2K - sounds delicious but they're older ladies, so it needs to be at least a little desified.... I'm hungry for some soup and a sandwich now...

^^ the problem with desi food is that its very heavy. the only thing light that we have is what we serve in Aftari during Ramadan

like Daye Barai, Pakora, Samosa, Mithai, etc....

Personally I love Mediterranean food. Greek, Lebanese, Italian, Spanish and Portugese, yummy

If u wana try some desi menu try zafrani rice with chicken 65 ,salad both green and russian, kabab , and pineapple pudding.
u can get the recipes of zafrani rice ,chicken 65 ,and pineapple pudding frommy food blog ,very simple and easy recipies specaily for hot summer lunch.

I agree with poster above to do appetizer type items. How about shrimp cocktail with cocktail sauce and maybe chutney? Or even tandoori shrimp? Make rice balls? Or vegetarian sushi? hmm spinach dip with all sorts of veggies/breads. Fish pakoray?
I would do the dehi baray for sure, that's always yummy. Make mango lassi or sumthing.

Thanks so much for all of the suggestions! I ended up cooking tomatoes stuffed with keema, pilau rice, raita, spinach dip and hummus with fresh veggies and bread for dipping, and just fresh fruit with custard for dessert.

It wasn't all that light, after all :-).

This sounds delicious. Have you ever made pizza with tandoori chicken on it? my kids love it.
