Leftover omelette

What do you do with it?

Cut into pieces and make Chinese fried rice. Use leftover rice or parboil basmati rice (make sure rice is undercooked like biryani rice). Stir fry your favorite veggies, add vinegar, soy sauce, chicken cube and msg if desired. Now add leftover omelette to veggie mixture. Now layer like biryani and give dum. After dum mix well and enjoy Chinese fried rice.

If I have leftover omelette,its used as is.If it is one with veggies I feel it stays well in the fridge for a day and can be used the next day.Cheese omelette,on the other hand looks and tastes weird after a while.

What kind do you have and how much ??

Probably two servings with lots of veggies: onions, mushrooms, tomatoes, peppers, fresh oregano, fresh dill, fresh cilantro, and cheese.

i think we’re having chicken fried rice for dinner! :hmmm:

Its best to consume omelette as is. However it depends on what kind you have ie cheese veggie or onion......plain omelette or veggie can be used for fried rice. Cheese is best consumed as is. Eggs once cooked don't have a huge shelf life and can't be frozen :(.

I learned the hard way that you shouldn't make too much of this in brunches or breakfast gatherings.

I've seen my hyderabadi friends eating omelet as side dish with daal chawal (khattichic may confirm this if its common). I tried that too and it tastes great

I am not a huge fan of leftover egg with cheese,anything else gets consumed the same day or next and tastes fine.(I know that because I have thrown it a few times when my kid refused to finish it and I did not know what else to do with it).
But then this is just me.Maybe someone else can suggest something else.

mm yeah i love having an omelette as a side with rice etc. its weird to those who haven't seen it before, but its tastayy. esp with chopped up green chillis and shallots in there.

I can eat omelette on toast, or as a side with rice and daal and achaar. It's yum!

make an omlette sandwich. Slap it between two pieces of whole wheat toast, some mayo (I prefer Miracle Whip), fresh lettuce, tomatoe, maybe even a slice of cheese and there you go! A nice lunch for the husband :)

erm.. not that there ever is any leftover omelette but I'd do what Afshi does.

I wouldn't use omelette with cheese for Chinese fried rice. I havent seen cheese used in Chinese cooking. Another idea would have been to pan fry tortillas (flour only don't use wheat tortillas for frying). Add the chopped up omelette, salsa, mozzarella cheese. Add filling and roll up tortilla and bake in oven for 10 minutes. It should really be yummy for lunch or dinner with any salad.

I always have it in a sandwich too, with sweet chilli sauce, it is yummy :)
