Layer Cake Filling

I am planning to make a layer cake tomorrow with strawberry filling, using fresh strawberries. Can someone please suggest how to prepare strawberries for the filling? Do I just blend em, or maybe cook em in a sugar syrup? I do not want it too sweet, really want strawberry flavor to be fresh. but not sure i wanna use em totally raw either. Please advise!!

although I have never made it myself but my mom used to make fresh fruit fillings for layered cakes and from what I recall,she used to cook the fruits with some sugar till they got a bit macerated and soft and not taste too raw,you know what I mean..:)

^ "Food Porn" is indeed a strange title. But I've no control over what people name their web sites. I was surprised by the title and checked out the link to make sure the contents were appropriate. I even checked it right now. If you click on the link, you'll see a search box. Go ahead and type in strawberry filling in the search box and it should lead you to a strawberry filling recipe that is written below a christmas cake article.

i usually just chop up the strawberries finely and mix it with whipped cream and use that for filling. i wouldn't cook them if you want them to stay fresh and strawberry like- cooking them in sugar water will make them two sweet and jam like.

I mostly make mine with mascarpone cheese. Hubs n I both love the taste. Mostly just a tub of mascarpone, some fine sugar and whip. With strawberries I would suggest to chop off em very finely and mix with the whipped mascarponee n sugar. Like sgc said, if you cook it in sugar, it will become too sticky and sweet and may overpower your actual cake.

I think a thin layer of strawberry filling would be nice. There are cakes that have a light layer of fruit fillings. And most fillings for cake are supposed to be sweet anyways and contain sugar.

If you don't want to do the strawberry syrup, then you can do a custard filling with cut strawberries. Or you could do a cheese filling. Or a whipped cream filling (although i find it heavy). Or you could just buy a jar of strawberry jelly and thin it down or add a bit of strawberry jello to it. Whatever you decide, i hope your cake turns out well:)

you can cook it without adding any water, and very light sugar. cook it till they are soft, but not till they turn into jam! mix it with a light whipped cream and yum yum yum

SGC, Thanks. I thought about it and agreed, I didnt want filling to be like jam , otherwise i can just buy that. So I used your suggestion and used fresh strawberries sliced for the layer...and drizled on a mix of condensed milk/cream cheese in the filling. Then I "frosted" the cake with cool whip. It came out pretty good and fresh tasting, yummy. I made one with just strawberries, and another with fresh strawberries & banana filling, and topped with kiwi slices. Yummy. My family loved it.
