The recipe I have uses ricotta cheese and I am not a big fan of it. What are the different cheeses you guys use? Also, i have seen lasagna made my precooking the noodles or by not boiling them. What do you guys prefer and is there a reason you do it the way you do it?

I use lots of cottage cheese. The ready to bake lasagna strips are convenient but I don't like using them. First, they tend to dry up and also don't cover the entire pan initially and my filling tends to leak a bit that way.
I knew my lasagna pics would come in handy one day. I took these hoping to post a recipe, but i'll just post them here.

Ira, there are a couple of types of lasagna strips. One you don't need to boil, you simply layer them in your pan and bake. The ones I use you have to boil first and then use.
Here is how I make my lasagna,
Step 1 - the beef filling
Minced Beef - rinsed and drained
onion - 1 medium sized
garlic - 4 cloves (I like my garlic, you can use less according to your taste)
ginger - half inch piece, peeled and crushed
Heat some oil in a pan and add chopped onions to it. Fry for 2 minutes, add the crushed garlic cloves, a pinch or two of salt and cook for another minute. Add your beef, cook for a couple of minutes.
Add a cup of water, place lid on pressure cooker and let cook for 5 minutes. (If you're not using a pressure cooker, just let it cook on medium heat covered for 20 minutes, stirring occasionally)
Once done, add your ginger to the cooker and cook until all the water's gone and the beef starts to release oil. You can adjust the salt at this point.
Step 2 - Lasagna strips
Fill 3/4 of a cooking pot with water, add a pinch of salt and 4 tbsp of oil. Bring to a boil. Add your lasagna strips. Let cook for 15 minutes or until the noodles are almost done but not too soft.
Drain the noodles in a big strainer, wash through with cold water and set aside.
Step 3 - layering
You'll need: A flat dish
lasagna strips - boiled and drained
pasta sauce
cottage cheese
mozzarella - grated
Spread a thin layer of the tomato sauce on the bottom of your pan. Then layer using the strips, beef, sauce, cottage cheese and mozzarella. On the very top layer, spread some more pasta sauce. Make sure you cover your corners. Sprinkle generously with the rest of the mozzarella. Drop small cubes of butter over the cheese. It'll give you a nice brown colour while baking.
You are ready to bake. Preheat oven to 350 F. Cover the pan with aluminum foil and cook for 35-40 minutes. Turn the broiler on and uncover your pan. Let bake for another 5 minutes or until all the cheese on top has melted and starts to crisp.
Your lasagna is done! Set aside for 20 minutes so that it sets. It tastes just as good as it looks.
You can play around with other ingredients, try mushrooms, some parsley to garnish etc.

Ira my recipe is the same as Hayaas. I add spinach to the filling too. I have previously used white sauce as well as ricotta cheese. Im not too crazy about either. I will use cottage cheese next time. Never use the ready to bake lasagna strips cos they shrink no matter how much u overlap them.

If you wet the pasta and add enough liquid to the filling you don’t need to boil the strips first.
There are a number of fillings you can use. Cooks in Italy use their fantasy a lot these days and I’ve eaten some really wonderful inventions these days.
Traditional italian recipe:
I made lasagna today and I used the regular noodles avalible in the store and didnot precook them. They turned out just fine. Bt my lasagna sucked
Mom made me addd chicken ka keema in the sauce (precooked). I also added spinach, mushrooms and olives. The sauce wasnt so bad but the ricotta cheese didnt taste so good in the lasagna. I didnt like it at all
Ipromised myself to make lasagna without the ricotta next time.
On a better note , I made cheesy garlic bread which turned out good though ![]()
