Lasagna no ricotta/cottage cheese?

Anyone have a lasagna recipe without ricotta or cottage cheese? It isn’t available where I am but I have like a bunch of lasagna noodle boxes I want to use up. Thanks!

That's so easy. Ricotta is not necessary, parmagiano is. All you need is parmesan and a little mozzarella or cheddar if you like. Layer your lasagne with bechamel and bolognese. Use cheddar and parmesan. It turns out amazing. I am not a fan of using mozzarella for lasagna, but many use it.

i never used ricotta or cottage in lasagna, even not parmesan. I just make chicken cubes filling with tomato puree, add white sauce and top lasagna with cheddar and mozzarella but parmesan can be great too. Never used ricotta and never heard of cottage cheese being used in lasagna

Parmesan is the essence of any authentic Italian dish. Authentic Italian recipes call for Ricotta to be used, albeit only mildly. It can be forgone. Mozzarella is something that's essential too. Cheddar is not necessary. However since I don't like my lasagne stringy - it is harder to cut, plate and serve then - I don't use Mozzarella, I make do with Parmesan and Cheddar.

Yes Parmesan has a distinctive yumm flavour. Ricotta can be used in the white sauce and even pamesan, I like the stringy one so i do add mozzarella but i have even made it with only cheddar cheese. however when i make pasta alfredo then i generously use parmesan, its yumm

Alfredo has its distinctive flavour due to a heap load of Parmesan. Now you've made me hungry!

Doesn't ricotta in white sauce make it grainy and weird?

Sometimes i love ricotta and sometimes i hate it. Idk what to do... it's really stressful.

Classically (and I mean the italian way), it is made with a bechamel. But italian bechamel differs from french in that it has no nutmeg or onion. It is just whole butter and flour roux, with hot whole milk whisked in. lasagna made with ricotta is more of a southern italian thing . Cow's milk ricotta can be used too (which seems to be popular in italian-american cooking).

If I'm using ground beef and marinara, I stick with ricotta. If I'm making a roasted vegetable lasagna, I go with bechamel.

i make the white sauce with butter flour and milk. Sometimes i put cream and cheese too but thats purely on either mood or the count of unhealthy food over the week decides this :D
No ricotta if not put a lot doesnt make it grainy however i usually stick to the cheese block shredded by me at home or cheddar cheese, even cream cheese can go fine
