My mom's part of South India has the yummiest lamb(actually goat - sheep is rare in South India) dishes. Sadly, most of them rely heavily on freshly grated coconut meat - too much work. I know of one simple recipe, it's heavy on powdered coriander, and needs coconut oil for the right aroma. Let me know if you still want it.

You can substitute "Cream of Coconut" for the grated coconut. And sometimes you can even get away with creamed coconut powder. I use it in some curries.

Coriander is alright but dont forget Cardamom,Bay leaf,Cinnamon,plenty of Spanish Onions,Zanzibar Garlic,Bengali Tumeric,little Giger root .
