This is not area specific. We are still unable to find out something like Bihari daal, Delhi sabzi (except for Baghare Baingan or Hyderabadi Baingan)

as far as i know, there are a few chain restaurants in and around New Delhi called "Kachcha Pakka Restaurtant" where, according to some Hindu philosophy/mythology, foods prepared by high caste Hindus using ASLI ghee called Pakka Food and those dishes prepared in Dalda/vegetable oil is called Kachchaa Food [prepared by anyone from any caste]...these are 100% separate establishment under the same roof.

did you know that in India, all fast food outlets, McDonald's and Wimpy's etc, have 100% separate kitchens for vegetarian and non vegetarian food but are prepared under one roof. patrons are encouraged to take the tour of the kitchen for their satisfaction. :)

I read that kacha food are basically dishes prepared using water like roti and rice.. These are considered low and can't be accepted / exchanged say from low caste or Muslims. Pakka food as you mentioned are those which are prepared using ghee (didn't know dalda / desi ghee distinction). BTW is there Dalda in India as well? I thought its a Pakistani brand.

i was talking about the restaurant...Muslims are NOT considered low caste...they are considered as someone belonging to another dharm...i never heard that a Hindu had to take a shower [to purify] if a high caste Hindu comes in contact with a Hindu...

...in modern age, these things are disappearing from cities and to some extent even in bigger villages.

even Muslims did that too...i remember those low caste 'slaves' [Prajaas], who served zameendaars, received sewaiNyaaN boiled in water with no milk on Eid day...i felt very bad about this practice.

btw, i LOVED this sewayiiN for Prajas...and...i preferred that on Eid day! :)

for those patrons who are vegetarians…still, the majority Hindus are vegetarians…shuddh shaakaahaarii. McDonald’s has to respect their dietary codes just like they don’t serve any pork product in favour of Muslims.

Many such things like Pindi chole, amritsari naan, bengali rossogola, dhokla, vada pav. idli-dosa-sambhar, hyderabadi biryani. if one loves sweet in everything, then everything kashmiri, and if one community knows to use sugar most judiciously, that is bengali.

Punjabi kaRhi is famous, but its seems that it doesn't have Punjabi origin.

veggie biryani nahiiN khaaii kabhii? :D they use kaThal [jackfruit] which is textured like beef [reshedaar sabzii hai] :D

that's according to the gosh Khors like you and I but believe me veggie Biryaanii is yummy...i once had it on Air India flight to Delhi from Toronto.

Biryan means roasted. In veg Biryani, whats roasted.... veg dish with rice is Bhaat, Tahiri, etc
