Kofta

Every time i try to make kofta ka salan the meatball falls apart. i tried many recipies and the same thing happened, maybe i’m stirring it too much?

I once used a bit of corn flour in the keema mix. Then after rolling them up, I fried them in a bit of oil until they browned up. This helped to keep the koftay from falling apart while cooking. The wooden spoon suggestion is also important. Don't stir too much. Just flip them carefully.

Try to put some eggs in it...should keep them together...

Ok so i just made some, put some corn flour into it, stirred with a wooden spoon. They didn’t break apart :yahoo:

putting eggs and besan prevents them from falling apart....
i usually freeze them b4 cooking....it makes it easy for me to handle them,
also i dont stir them much,just let them cook on slow flame......

do you think i could make a whole much, just the meatballs and then freeze them for days when i'm lazy, so i could just make the salan and pop them in.....would that change the flavour?

i always freeeze them and make them whenever i want....they taste perfect.....so go ahead...!!
