Hey everyone, I just recently bought a KitchenAid Stand Mixer and couldn’t wait to use it to knead atta. So on my first attempt, I used 3 cereal bowls of atta and periodically added water while the mixer was at its lowest setting. I had to stop mixing after a while though, because the ball of atta was threatening to get stuck all over the dough hook attachment. Needless to say, the atta turned out hard to roll so my attempt was a failure.
I was wondering if any of you use this method to knead atta. If so, what ratios do you use for atta and water? And what setting do you leave the mixer at?
I have been using the Kitchen aid stand mixer for about 5 years now and I make atta about 2-3 times a week.Unfortunately I cant tell you the exact ratio of water and atta as I just eyeball it.I add atta till about the middle of the bowl and about 2.5 mugs of cold water.I let it work for maybe 3 mins at the slowest setting or the next setting.
I prefer to use cold tap water for kneading the dough as it kinda gives me the idea how hard it will get once in the fridge.
If you feel it is too sticky you can add a spoon of atta and let the machine do its work.It usually takes the right consistency in a few mins and becomes a ball around the hook and separate from the insides of the bowl.
Certainly do not give up on it.In a few trials you will eventually figure out the ratios and then just eyeball it.
I dont have Kitchenaid but Kenwood. The Kenwood has written in manual to add water before adding atta. I usually knead 3 cups of ata and i put 3/4 cup of water first and then start it kneading and then adjust it accordingly.
To get the hang of it, start with 1 bowl of aata. Like put 1 bowl of aata and one cup of water.
Even if you think it is too watery, let it run for a while to see if it gets any better or to your required consistency.
I start at the slowest speed but in the end run it at little high speed.
