Yesterday I wanted to fix me and hubby a quick dinner … so just looked in the fridge and decided to use the cabbage and capsicum thats been lying around since days …
so I made vegetable fried rice along with orange daal and Oh my god the combo came out rocking …
.. so just sharing it .. some of you might wanna try it too in lazier times ![]()
Vegetable Fried Rice :
Boil one cup rice , when they have cooled off , put them in the fridge for a few hours . Then shred some cabbage and chop some capsicum, some peas ,some corn …
Now make sure the heat is on full flame while you do this : Heat a pan with some oil.. when its very hot , add the cabbage , stir quick, then two minutes later add the capsicum , stir … then add half spoon salt, quarter spoon ajinomoto, half spoon soya sauce, half spoon vinegar, half spoon fish sauce, half spoon chilli sauce, some black pepper freshly ground , give a quick stir and take off the flame , cover and keep aside..
Then take out the chilled boiled rice … heat a frying pan , add two tablespoons oil, wait for it to become hot , then add the rice and start frying them on high heat .. for a good three to five minutes … they will start smelling different and will become very aromatic ..add them straight into the vegetable mix …
Stir the rice and they are ready to be served ..
**The Orange Lentil ( masoor daal ) **
Heat a pan, add some oil, when really hot, add half teaspoon zeera , and chopped green chillies (two) .. stir them .. when the zeera starts sizzling , add two cups water and the orange masoor daal about half cup .. cover and let it cook .. keep stirring occasionally .. after 15 minutes add about three cups more water …keep cooking .. 1o minutes on , add one teaspoon salt, one teaspoon red chilli powder, half teaspoon turmeric .. let it cook …
in a frying pan , add some oil and when really hot, add one sliced onion .. fry , fry ,fry until browned , then add this to the daal … and stir the daal … continue to cook the daal .
In the frying pan, heat it again and add tiny bit oil, then add one teaspoon garlic and fry it , it will sizzle so be careful .. quickly add 1 crushed tomato and cook on medium heat .. until the oil separates .. add this to the daal ..stir and let it all cook.. also add the fresh cilantro at this stage … when the daal has reached a good consistency that you like … its ready to serve …
