kichree

So how do you guys make kichree? What dal do you use and in what proportions? I dont make it very often but in the past i have tried the one with green chilka daal. Today hubs wants it with some sort of yellow dal. PLease share ideas/recipes. Again this is for tonight’s dinner so if you guys can reply soon, that would be great.

Mucho gracias.

Re: kichree

i made it just last night... but a different way.. sort of an experiment which turned out well! i made it with palak and mushroom.

Recipe: Palak and Mushroom Khichri

Ingredients:
butter or olive oil, 1 onion chopped, 1 tbsp ginger garlic paste, 1 cup chopped mushroom, 1 bunch chopped spinach (i used fresh, not frozen), zeera and dhaniya powders, red chilly powder, garam masala 1/2 tsp, rice and lal masoor dal in 2:1 ratio.

Directions:
heat some butter/olive oil, fry the onion, add ginger-garlic paste. when the onion is browned, add mushroom and stir fry; then add cumin, coriander powders, garam masala, red chilly powder and salt. stir quickly and add the chopped spinach. when the spinach wilts, add rice and lal masoor dal. fry for a bit, then add water and cook covered on medium/low until done.

Re: kichree

Well the rice and daal I use is 1:0.5

What I do is soak rice and dal for atleast 20 mins.

In a pan golden browm some onions, add ginger garlic paste and saute it for few mins then add zira and sautee it for a min then add other khara masala like big ilaichee, cinamon stick, cloves, and salt to taste. Then add rice and daal. Saute them for couple mins. Then add water. Cover and let it cook on medium heat till water gets a boil and then reduce the heat. When you don't see any water, reduce the heat even more and leave it on dum.

I use this recipe for green chilka wali daal and the yellow moong daal.

Re: kichree

i make the sookhi kind (proper rice) and not hte porridge :D

my recipe is

1 mug rice

1 mug green chilkay wali daal (the split one and not whole one).

salt (to taste)

1 small onion (finely sliced)

6 laungs and 4 peppercorns

4 red whole chillies (hand crushed)

1/2 tsp zeera (left whole)

1/2 tsp ginger and garlic paste

how to make

Saute onions until golden, add everything cept for rice and daal.

add rice and daal and saute for 2 mins.. keep it moving

add enough water to cook the rice and daal. (add warm water rather than cold).

put on dum for 5 mins.

Re: kichree

Thank you ladies. Since i was in a hurry, id dint use onions waghaira, and just used lots of butter/ghee and browned some whole garam masala. Then added water to boil, salt and black pepper. When that started boiling, i added rice and mungi dal (hubby requested moongi yellow wali warna usually i make with green chilkay wali moongi). I used a ratio of 1.5c rice to 1 c of dal.

I think next time i will try with fancy shmancy onions and stuff.

Nimks, i dont think i have ever tried palak and mushrooms wali kichree. Hmmmm. Gotta give it a try to that too.
