Khubani ka meetha and other desi desserts

I love desi desserts and this one is the best. For those who don’t know what it is, it’s custard and pureed khubanis (what the heck are they in English) layered, with nuts and fresh heavy cream. The contrast between khatta and meetha is yum.

Who makes desi desserts like ras malai and burfi at home regularly? I have stopped trying after we had to throw away a pateela because I burned it beyond repair.

i've heard about it but never tried ....

as for rasmalai ....my family loves it ....n i make it quite often

barfi....i don't like it ....so never tried !!

Deserts like Khoobaani ka meetha and Shaahi Tukray are delicacies in our house.....i think we cook it every 1 year or so :D

I made Rus Malai at home after every two months or may be three months but most of the time I made Gajar ki kheer it is awesome.

Khoobani ka meetha, i made it once but didnt really care for it. i guess the apricots were a bit too khatii for my taste.

Afia baji and Jias please share your recipes for ras malai. :yumyum: ammi ji has tried them several times but they always turn out undercooked in the middle!

Ingredients :

Milk------------------------------1 liter
Sugar--------------------------- up to taste like 3/4 cup
Cardamom Seeds ------------1/2 tea spoon
Milk Powder -------------------1 cup
Baking Powder ---------------1/2 tea spoon
Ghee or oil---------------------1 table spoon
Egg -----------------------------1
Pistachio Nuts-----------------2 table spoon crushed

Preparation:

  1. Pour milk into a heavy based saucepan, add sugar and cardamoms and stir to dissolve the sugar. Bring the milk to boil, reduce the heat to very low and simmer uncovered while making the balls.

  2. Place the powder milk, baking powder, ghee and ground cardamom into a bowl. Make a well in the centre. Whisk the egg and pour into the centre. Using fingertips mix the milk and egg , the mixture is sticky. Knead lightly until smooth about 3 minutes.

  3. Divide the dough into 15-18 equal parts. Roll each part into a completely smooth ball.

  4. Now place the balls one by one in the simmering milk. Cover and cook for about 8-10 minutes or until they are double in size. During cooking the balls will float in the milk, shake the pan occasionally to covered the ball with milk.

  5. Remove from heat and keep covered and put aside to cool. Transfer to a serving dish, covered and chill for several hours before serving. Garnish with finely chopped pistachio nuts.

powdered milk..............1 cup
egg...............................1
flour..............................1 tsp.
baking powder..............1 tsp.
oil..................................1 tsp.

milk................................1 liter
sugar..............................6 tbsp.
cardamom.......................a few

boil milk n sugar with cardamom .....then let it stay on stove on low heat

mix the rest of ingredients ....n make small ovals/balls
no add these to milk cover n let it cook for sometime while still at low heat(otherwise milk will boil again n will spill out)

take the balls out in a bowl after few minutes (max. 10 minutes) now bring milk to another boil n then pour in bowl.....add pistachio / almonds etc. if u like:)
