Re: Khichri recipe
the mush oen or the proper rice one? doesnt make a diff.. u just add more water to mush up the regular kichri
here is mine..
you can either use yellow lentil or the green split lentil.
1/2 cup rice and 1/2 cup green lentil... soak seperately for 20 mins each. (i actually dont care how long i soak em. the longer the less time for cooking. but you follow how you normall would soak your rice and lentils :)
1 small onoin (sliced finely)
1/2 tsp zeera whole
salt to taste
2 red whole chillies (hand crushed if they are the round ones or slit into parts if they are the long ones).
ginger and garlic paste (1/2 tsp )
in a deep pot, add some oil and sautee your onions until light golden.
add the ginger and garlic paste and let it pop.
add teh drained rice and green lentil and sautee for a bit
add water enough to cook the rice and lentils with the salt.
voila.
i always add some butter at the end when serving.. my dad justl ikes it like that..
we eat it with tomato chutney
1 tomato
salt to taste
garlic 3 cloves.
5 red whole chillies.
1/2 tsp zeera
blend it all in a blender to make smooth paste.
MMMMM.. its very spicy so dont add it like you would raita :D
Re: Khichri recipe
If i'm making it just for myself:
1/2 cup rice
4-5 tablespoons moong daal
1 tablespoon ghee
black peppercorns
3-4 dried mint leaves
1 cup warm water to which a chicken 'stock' cube has been disolved.
1/2 finely sliced onion.
1/2 tsp zeera powder
Soak the rice and daal, heat the ghee and add-in the onions, peppercorns and mint leaves till the onion is slightly brown and add the daal/chawal and combine it well then add the stock, zeera powder and salt if need be and cook it on 'dum' over slow flame. (I don't like turmeric so I don't add any)
Re: Khichri recipe
wow thanks so much ladies ... question is , dont the rice cook quicker then the daal? normally it takes the daal around half and hour to soften up while it takes the rice just 10 minutes ... if I put both together in the pot , how will i handle the daal getting cooked properly ?
Re: Khichri recipe
Never been a prob with me. Soak ure daal for an hour to 2 hours then. I know someone that does it overnight.
Soak ure rice for less time.
And then go from there.
Re: Khichri recipe
Remember... The daal is meant to be soft but bot mush. Khari khari honi chahiye.
Re: Khichri recipe
I love mushy khichri that's a bit on the liquidy side like a risotto. Mine is even simpler than the above fancy shmancy recipes...but turns out very yummy.
1/2 cup rice, 1/2 cup of a mix of orange and some yellow daal (sorry don't know the names.) I wash and soak them all together (rice and daals) for half an hour. If I'm short on time, I don't even bother soaking. Add rice and daals to your pot with 3-4 cups of water. Add all your spices, some ginger/garlic paste, and a tomato. Bring to a boil, and then lower the heat to medium-low and let it cook. Keep a check on your water quantity so it doesn't dry up. Add more water if necessary. Cook until mushy and done. Like khawa said, daal is meant to be soft but not mushy, and rice will be mushy.
I do tarka like you do with daal. Fry some mustard and cumin seeds, add thinly sliced onions and fry until golden brown. Add to your khichri. Simple! You can have it with tomato, anardana and mint chutney, or regular raita. I think I'll go make some now!
