Khichri and koftay plus a bday party

I know you are all thinking that khichri (yellow rice dish) and koftay don’t go together but I just need the recipes of those if anyone can tell me properly. I miss my Moms khichri and didn’t learn how to make it. ;-( What ingredients are needed and how is it done? As for koftay, how do I make it without using shaan masalas? How do you get the perfect round ball?? Here is the third and final help I need and the biggest help of all: My husbands bday is at the end of the month and I want to have a dinner with him and his close friends at home. He looves desi food and would preffer it at his party over American food like burgers or pizza any given day. I am not that good of a cook so I need simple recipes with a mild to almost high level of mirchi factor. Any ideas?? Thanks in advance for resucing me..that is if you do!!

So no one knows how to make koftay? Aww, me sad. Okay, how about khichri then? Also what are some good desert ideas that are easy and adult like that I can make for my hubby? Hes not into cake or anything thats too sweet. Thanks for any inupt!

first of all i just wanted to say that i love kitchri, and i think kitchri and koftay are a wonderful combination :)

ok, here's my kitchri recipe (I'm not sure how many people you intend to serve):

for every 1 cup of masoor ki daal, use 2 cups of rice (so its always a 1:2 ratio), if you like more daal then by all means add more daal...

make sure the daal is cleaned (no stones etc...) and mix the dry ingredients together (daal and rice) and wash it, set it aside in water and allow to soak

next cut a medium size onion in slices and fry in oil in a pot. by the time the onion has been fried, the rice has been soaked.

put the rice/daal mixture in the pot of onions and add water (lets say you have 3 cups of daal/rice together, add an extra cup of water = 4 cups of water, i usually just add an extra 1/4 cup of water, but however you normally make rice, use that method).

next put a tsp of salt for every cup of daal and rice.

put it on high heat, when it starts boiling, stir, reduce, cover and simmer...

now everyone's kitchri recipe may be different, so i'm sorry in advance if this is not the way your mom makes it.

Thanks for your help khatifah! I will do a test run on khichri next week. Wish me luck as it shall be my first time ever making it. You never think of khichri as a dinner or party food but some of my husbands friends are not Desi so they may like it although my intention was not to make this at his bday party. I want to make his favorite:biriyani with a side of salad. Thanks pareezay for your input as well.
