3 oz. rice
1 qt. half and half milk
2 1/2 c. milk
3 oz. + 2 tbsp. sugar
1 oz. blanched almonds, cut into slivers
1 oz. unsalted pistachios, cut into slivers
3 green cardamoms, lightly crushed
1 tsp. rose water (optional)
5-6crushed hair of saffron
Wash rice. Drain and place in a heavy based saucepan. Add the milk and half and half milk and bring to the boil over medium heat. Reduce the heat and stirring frequently to prevent the rice from sticking to the bottom, simmer the pudding uncovered for 1 1/2 - 2 hours until the rice turns soft and mushy and the milk has thickened. (The consistency should be that of thick porridge.) Add the sugar and stirring continuously, dissolve it. This will also thicken the pudding slightly. Add the rest of the ingredients. Stir well and serve hot or cold.

My hamsaie makes it this way..
take 1/2 cup rice for 1 liter of milk.
Doodh aur chawal ko thora paani daal ke choolhay pe charha do… boil honay ke baad halki aag kar ke degchi ke neechay tawa rakh ke saari raat paknay do
ya atleast 5-6 hrs. phir subah uth ke cheeni daal do jitni marzi chaho..
I tried making it a few times this way, but it takes just too long. I just discovered a shortcut ![]()
instead of pakaieng milk for 6 hrs, I use1/2 can of evaporated (not condensed) milk per every liter. It does a great job. and works with every doodh wali recipe.
Now I think I iwll go and make some kheer now

half n half is half milk and half cream and u can also put half cup condens milk to give maza pf khoya....

i usally take half cup or ric efor 1 1/2 lit milk,soak ric ein water for 15 min then crush them with hands ,boil the milk with ilachi and zafran,then add the rice in it an dcook it for hours on low heat ,in the end i also add evaporated milk one can and half can of condance milk in it.and suger as u like,add blanched almond and pistachio in the end.

for saving on milk ...(if u are in pakistan :D )...u can soften rice (when it starts breaking just by stirring spoon in it) in water first and then add milk and the rest of the stuff...:p

kheer is neat, but cold firni even delicious.
i make it reeeeeeeeeeeeeeeeeeal Good.
follow the same recipe, but only use pureed water soaked rice (do not make a paste, but granulated feel to their texture)
after cooking the firni mixture,
switch into a nice dish
decorate with shredded almonds/ pistachios and silver paper.
refrigerate for an hour.
serve whenever u like, or normally after lunch or dinner.
