Khara masala ..

so when people say they like chicken with khara masala .. what do they mean? is it thick gravy that they mean?

not thick but coarse gravy that is not smooth textured and has dum wala pyaaz and tomatoes in it..we call it kharay masalay ka chicken or mutton or karailay or bhindi

its khara masala vs smooth masala (khara = standing)

in khara masala your main sabzi tomatoes and onions are not blended (also you dont use powder of your masalas for eg u use whole chillies, black pepper etc instead of the grounded ones) hence u can see them. in smooth curry every thing is blended so your curry is like a smooth puree.

Ohhh yes , now i know what you mean ... so they dont really blend the onions either ... sliced onion is used as the salan base .. hai na? Tomatoes arent fried until they blend into the salan , they are somewhere in between, just softened rather them melted ..

^ most welcome. yes onions arenot blended. people cut onions and tomatoes evenly to give it a nice texture.

onions dont have to be blended for any saalan's base as long as they are properly fried....people blend onions according to their preferences.

yup .. thats brilliant information you shared .. I didnt know people chope onions and tomatoes similar size , it does make sense coz i think once i had something similar and i think it was khara masala but i was amazed that everything looked so even yet you could tell what was what in the salan ...

So what do they do about the spices then? like red chillies , turmeric etc .. do they use them ?

^ thanks. i'll say even if you wanna blend your onions and tomatoes for a smoother curry they should be nicely chopped or atleast in small portions since they get cooked/fried much easily and in less time compared to big chunks. after wards you can blend them or leave it as it is.

oh yes all other spices are normally used like for any other saalan...as far as i know the main "khara" ingredients in khara masala are tomatoes and onions which are not blended. its a personal choice if someone wants to use whole peppers, coriander, fresh adrak, chillies etc instead of the powder/paste. other spices like turmeric, salt etc are used normally andare essential for the taste.

if the dish is being made with khara masala then it doesnot mean that some type of special masala is being used but if you look at the title carefully then khara means "standing"...standing spices (khara masala)....so in literal term it means the spices are standing and in food term it means that the masala you used to make the curry is visible thus standing.

ps. for khara masala its best to use fresh solid tomatoes. because in tinned chop/whole ones the tomatoes are a bit mushy which can ruin the texture of the khara masala. and when khara masala is being made then the quantity of curry is usually less because no one likes to see their tomatoes/onions swimming in the curry..atleast i dont.
