it’s a burmese dish made of noodles mixed with coconut curry, spicy chicken pieces with lots of green vegetables, roasted nuts and other stuff sprinkled on top…khow suey is very rich in taste. :k:

bhenjee, i just made khow suey last night for the first time & it turned out great...:) I really love it! it's easy to make and it's one dish that you can customize according to your taste n liking so you're going to recieve different recipes from diferent people. Some people make curry and chicken/meat pieces together. I personally cook them separately and mix all the ingredients when the meal is served so my recipe will have three parts(curry, fried chicken/meat pieces, and ganishments). Anyways, I'm going to post mine later today.

actually its ....Kaukswey
1 3lb roasting chicken

2 tablespoons chopped garlic

2 tablespoons chopped fresh ginger

2 large onions, chopped

2 teaspoons dried shrimp paste (ngapi)

3 tablespoons peanut oil

1 tablespoon oriental sesame oil

1 teaspoon ground turmeric

1-2 teaspoons chilli powder

2 teaspoons salt

1 pint/2 cups thin coconut milk

1 pint/2 cups thick coconut milk

2 tablespoons chick pea flour
Joint chicken and remove any excess fat. Cut joints into smaller pieces so flavors will penetrate.

Purée garlic, ginger, onion and shrimp paste on high speed in an electric blender, adding a spoonful of peanut oil if necessary to facilitate blending.

Heat the remaining oils together in a large, heavy pan and fry blended ingredients, stirring, for 5 minutes. Add chicken and continue to fry, turning chicken pieces until they are no longer pink. Add turmeric, chilli powder, salt and thin coconut milk. Simmer until chicken is tender, adding a little hot water if it dries up.

Stir in thick coconut milk and stir constantly while it comes to simmering point. Mix chick pea flour with a little cold water, add to gravy and stir until it thickens.

Cook noodles in a large saucepan of lightly salted boiling water until done. Pour cold water into the pan to stop noodles cooking, drain in a colander and serve at once with curry and a selection of accompaniments. These are intended for each person to add according to taste and include fried garlic flakes, crisp fried shallots, crisp noodles, fried dried chillies, chilli powder, roasted chick pea powder, lemon wedges, chopped fresh coriander, finely sliced spring onions and fish sauce.

sorry for delayed response. Here's my recipe.

Fried chicken/meat pieces
2 cups boneless chicken bite-sized pieces
1 small onion finely chopped
Ginger/Garlic paste
1/2 tsp garam masala
1/4 tsp Turmeric
Red chili powder to taste
Salt to taste

Method:-
Heat oil. Fry onions until brown. Add ginger/garlic paste and fry for few seconds. Add chicken pieces and all the spices. Cook til the pieces turn light brown or done.

For Curry
1 Can coconut milk(available at most supermarkets)
1 small onion chopped
2 tbsp Besan/gram flour
2 1/2 cups Water
1/4 tsp Turmeric/haldi
Pinch of Red chili powder
Salt to taste
1 tbsp Oil
4 cups of 'boiled'(!) Thin spaghetti

Method:-
Mix well coconut milk with besan in a blender or a bowl. Add water.
Heat oil in a pot, fry chopped onions til they turn golden, add turmeric and red chili powder and stir(do not burn the spices). Add coconut/besan/water mixture and salt. Cook for a few minutes or until done. Mix in the boiled spaghetti noodles. Ready.

Garnish the following generously when serving:-
Spring onions chopped
Cilantro chopped
Green chillies chopped
Onions thinly sliced & fried
Garlic thinly sliced & fried
Peanuts roasted
Fresh Lemons cut
Crushed red chilies (optional)
Chaat masala(optional)
Boiled eggs sliced(optional)
Add your own to the list

Transfer the spaghetti in a bowl, top it with chicken pieces, sprinkle the above garnishment and squeeze the lemon last. Serve. Ready to eat. Taddaaaa. :-))))

^ tried this recipe along with corriender, green chillis, fried onions, red pepper and slim chips for topping/garnishing.

i had it for dinner tonite.. it turned out pretty good! i kinda did a combo of all the recipes i read... i kinda like the desi, taiz mirch masala taste... so i skipped the fish sauce.. n for topping had lays' bbq lying arnd so put that..
turned out pretty decent alhamdolillah!!
