Its a dish made up of cooked/fried eggs, it looks as ‘maghaz’ (brain) fried.
Does anyone have a personally tried and appericiated recipe for Khageena? I know its the easiast dish to make, I have eaten it so many times outside but its never made at home for some reasons.

It has eggs, lot of onions(dark red), small cube potatoes and spices all cooked together scrambled. Potato is very important ingredient otherswise its not khageena... call it omellete then.
The only reason I don't eat it much becuz it can be really oily since everything needs to be cooked properly so it needs good amount of oil. If you can try cooking it with virgin oil or use minimum oil, it can be an amazing dish to eat on the weekends for breakfast.
I usually don't measure each ingredient but i'll write approx. amounts.....this is my tried recipe ...my eldest loves \it!
YOu need:
Onion.............................1 medium
Potato............................1 medium
Eggs................................3-4
green chillies....................1-2 (optional)
Oil....................................2-3 Tbsp.
Salt n pepper....................to taste
Wash potato, peel n dice it.
Peel onion, wash n slice it
Put in a pan with some water (ummm lets say 1/2 cup water)
cook it till potatoe is tender n water is evaporated
meanwhile beat eggs with salt n pepper
once potatoes r done add oil n bhoonify it a bit ....don't over do it though.
then add beaten eggs n cook while stirring.
I use not much oil so it requires constant srtirring otherwise egg will start sticking to the bottom of pan
add finely cut green chilliws n fresh green corriander if you like.
once the egg is \cooked ( looks like scrambled egg) remove from stove.
khageena is quite favourite in our family as well…
I didnt know you put potato in them as well.. But anyways… i just fry dhair sara pyaz, then add lal mirch, haldi. namak, then add lots of anday in it. add green chillies and then cover it to give dam for next 10 mins. After ten mix, break anday and make a kachoomar(lolz) and enjoy with chapati. Its more tasty with chapaty than with parhata
I had Khageena at a friend's house when i was in karachi. I'm sorry to say this but i got food poisoning every time i would eat it. They only used eggs, onions (that were fried until they were burnt), and lots and lots of spices. I had such a horrible experience that i still get sick just thinking about it.
true. People in pakistan are so used to of eating spicy stuff, it can make u sick. I used to get heart burn becuz it's oily and it has lot of mirchein in it.
But if you are making it yourself, make it mild and make sure to add potatoes which will help making it even milder taste. It can be really tasty.
