Re: Keema karelay

Keema bharay karelay: Is it something like that first make masala-daar keema the regular way and then fill the keema in the karela shell and then thread around and fry?

Re: Keema karelay

I've been craving keema karailay but I want someone else to make them. :(

Re: Keema karelay

I would eat anything but keema karailey is a big no no.

Re: Keema karelay

ok I THINK....im supposed to peel the karelay and soak them in salt for some time.
Cut open the karelay and discard those seeds.
Cook/fry the keema as usual, then stuff the karelay with keema, wrap a thread around it and fry. I can do that. but what about the masala and those seeds?

Re: Keema karelay

^ I've never made karelay like that....

I just chop them up and chuck them into a masala....mixed with gosht.

Am i missing out? :(

Yes, you need to soak in salt for a while. I don't know the exact masala for keema (will find out from my mum for you), but I do know that she puts kalonji (onion seeds in it), and the keema is made with more onions so it's slightly sweeter to balance the bitter taste.

You peel and de-seed them then rub them with salt and let them sit for an hour..and then wash thoroughly.

I boil the keema with ginger/garlic paste, peppercorns and red chilli powder untill the water dries-up.

In a seperate pan I heat oil and add finely chopped onion, gin/gar paste, whole dhania seeds (slightly pounded) and 1/2 tsp kalonji seeds, zeera whole. Then the regular masala's. Salt, dhania powder and zeera powder. You fill the kerailay with the keema tie a thread around it and fry on each side..

Sometimes I blend gin/gar paste, salt and yoghurt and pour over it..

Nope. I make them the same way as you. The only time I heard about keema karaley was when my MIL made them. I actually prefer karaley with lots of masala and gosht :p

Re: Keema karelay

I think…Gina’s method of making keema filled karaleys is the best so far… :k:
