Kebabs getting shrunk - Help

Whenever I make lamb kebabs they shrink to almost half the uncooked size.
They become smaller and fatter in the middle, dunno what i am doing wrong.:konfused:

Is there anyway to stop them from shrinking?

uh oh …sometimes this same thing happens to me too .. I mean to my kebabs :rolleyes:

I think we might be overcooking our kebabs :hmmm: .. last time I cooked them a few seconds lesser and they sort of retained their size …

Also I think , are you frying them in enough oil? I also increased the quantity of oil and suddenly it seemed like they werent shrinking no more :hmmm:

Cb i do use minimum oil.. like a table spoon or so..maybe that’s the prob :hmmm:

you need more lean to fat ratio in your cut of meat used to make the ground lamb. its shrinking coz the fat just melts off.

one thing for make sure no water in the mince also this also cause the kebabs to shrink.

Lol..this reminds me a Punjabi idiom..Pakaan laii’ Dhee’an nu wadda gosht teh noo’ah nu chota gosht ( for cooking,let daughters cook beef and daughter-in-laws cook mutton) since mutton always shrinks and they can blame the DIL of either eating up half of it during cooking or messing with it somehow making the final quantity lesser and they can be blamed for the mess :hehe: as compared to beef which doesn’t shrink on the other hand !

mine don't shrink much when I make them as seekh kebabs.... they do shrink when I make patties.... so now I make them all seekh kebabs.... :)

One more thing Masi , recently when i made seeek kababs , I intentionally made them thicker and bigger … and they didnt reduce as much as they usually do when i make thinner kebabs … :hmmm:

you should discrease the lavel of flames, at lower heat lavel they wont shrink and will be more tasty,
