GREEN TEA(kashmiri chAi)
water 2-3 cups
sab ilaiichi 2-3
green tea/jasmine 1 n a half tsp
metha soda a pinch
milk 1 glass
thanda panni 1 glass
salt a pinch
nuts

I make it this way (just finished making it an hour back too :D)
soak 3 tsp of the leaves in 2 cups of water in a pan for 30 minutes. add half a piece of star anis, a pinch of saunf,seeds from a green cardamom,half a clove ,cover and bring to boil and let simmer for 15-20 minutes. then add 4 cups of cold water, phainto-fy for 5-10 minutes until it comes to boil (this is an important step) and then add a pinch of baking soda. it will change colour imemdiately. simmer for 2-3 minutes and check for colour adding some of it in milk in a cup. I usually let it cool and transfer into a bottle and refrigerate and use ie it for upto 3-4 days by adding milk. it is served with crushed almonds,pistachio,sugar or salt.

yummy .... my favourite drink ... this is how i do it :
Boil one two cups water .. then add two tsp green tea leaves and add quarter tsp baking soda .. cover the pan and let it boil on low heat .. after about 15 minutes , add in cold water and start splashing the mixture with a deep spoon .. ( fill the spoon , raise it to the top of the pan and drop and the chai back into the rest of it ) this process helps release flavour and color .. keep doing this for five minuetes at least .. then add another cup cold water and do the same splash action again ...
When you see the chai has become dark maroon color .. at that point add 2 cups of milk, bring it to a boil ... then minimize the heat and splash the tea once again a few times .. finally add salt and sugar or just salt or just sugar , what ever combination you enjoy the most ... finally before taking it off the flame , add half tsp cardimom powder ...
I usually whip up some cream and spread it on top of the tea and sprinkle some nuts ... it makes a really enjoyable drink :@:

Proto's recipe is really good. I also make it the same way and chia has nice color, taste and aroma.

I have the same question as devilish angel, and also a question about the actual tea leaves. I went to a Pakistani shop and asked for Kashmiri chai ke tea leaves and the gentlemen said it was finished at that time. He said it came in the form of loose tea leaves. But then another friend of mine said I should just have bought regular green tea (unflavoured) since it gives the same result. Is that true? What tea am I supposed to be using?

yes v can store kewa in fridge. my aunt make kewa and put it in the bottle and keep it in fridge. as she makes 5-6 cups daily at night. and its really convenient for daily use.

Another stupid question: does it matter what type of bottle I keep it in? Will a glass bottle help to keep it fresh longer maybe?

I have tried that and the color and taste just is not the same if it is stored in the fridge. It sort of starts looking brown instead of Pink!

It was like that after 1 day in the fridge. Mind you when I leave the pink chai in the fridge it is ok for 3 or 4 days. It only looks strange when it is kehwa!
