This is the recipe I have posted again and again and many people have responded positively to this recipe. It has never let me down ! a must try , I say
Two cups of water , when it starts boiling add in two heaped tablespoons of the green tea or kashmiri tea leaves. Also add in quarter tsp soda bicarb. Cover the pot and let it boil, over lowest heat setting. After about 20 minutes, you will notice the leaves would have left quite a dark color in the water ( maroonish ) now add in a really chilled glass of water and start splashing it by filling it in a deep spoon and then dropping it back in the pot. You do this so that maximum flavour and color releases from the leaves. When it starts boiling , add in another chilled glass of water and carry on splashing it. Splashing usually takes me about 10 minutes.
Finally add in two or three glasses of whole milk … depends how strong you like the tea … at this stage add in freshly crushed cardamom seeds of 10-15 cardamoms .. or cardamom powder half tsp … let it all boil really well …
Some tips:
If you want it rich and creamy like the pink tea you get on maal road in murree, then add condensed milk and thick cream, instead of whole milk.
Normally its served with a bit of salt or sugar , which are served separately along. But I add sugar and salt during the splashing bit , add a tiny bit of both and keep tasting until you achieve the perfect balance between the two
Add crushed almonds or pistachios either at the end or right at the time of serving so they dont lose their crisp.
If you are wondering where you can get the kashmiri tea from, I usually find mine at the desi stores. They are labelled clearly so it isnt difficult to find
