Its all about getting the right tea leafs, in my experience the smaller the leaf the better.
anyway i usually use about 3-4 tblsp of chai
1/2 tsp soda
pinch of salt
star aniseed (optional)
green cardamom (optional)
i let it boil for about 10 boils (if you know what i mean), i then take it off the heat and start added water and pehnt it (water can be both hot or cold, ive tried them both and they work the same)
During the pehnting you will notice the colour of the kava changing it will start to become reddish, at the same time you will have boiled some mild, add kava to milk according to colour/thickness required.
Add sugar as desired, you can top the cup off with some cream on top of the tea and some grounded pistachio nuts

you mean salt right..because kashmiri chai is not sweet...its salty..and consumed with pheyonees.. mmmm mmm :)

the crunchy fine and thin fried noodles...they are salty too. yummmm
we dip/soak them in a bowl of kashmiri chai...and drink tea while eating the tea soaked phiyonees (sp?)
of course no kashmiri breakfast is complete with chai and phiyonees and hareeesa.. :)
Is it the same thing people have during Ramadan too? They look like very fine seviyan?
