i made kashmiri chai last week and it taste great i took the recipe from a kishmiri,take 2 cup water add 2 tbs kashmiri chai ,she said kashmiri chai is not grren tea ,its seperate tea, and 1/4tsp baking soda,boil it and cook for at lest 15,20 min then add one cup od cold water to it and boil,add milk as u like or a pinch of salt,she said not add suger to it as kishimiries dont add suger to it and adding suger is an insult for the tea, anyway i made the tea and it was good,i add badam and pista to it too.
I dont drink it, but if you are ever in NYC, I hear this restaurant near Haandi's has pretty good Kashmiri chai. It's the one across the street from Curry in a Hurry, next to the corner restaurant. (i.e. its not the corner restaurant).

Don't know about #1, but for #2, the trick is to only turn the seekh kabab once. People like to keep turning it and turning it for whatever reason, but you only turn it once after the bottom is cooked through and has stabilized.
where can you get the tea leaves for kashmiri chai from? can the same taste and colour be achieved frm green tea leaves... my dad always talks about the pink tea that my Lt. grandmother (may Allah grant her a place in heaven. Ameen) used to make for him. and i'd really like to make it.
Usually you can find kashmiri chai in Pakistani grocery stores (not Indian). When I lived in Brooklyn, the desi grocery stores on Coney Island Ave used to carry it and it was labeled Kashmiri chai.
I make my pink tea from green tea. You don’t need to go to Kashmir to get it, green tea is widely available and you should not have any difficulty getting hold of it from any good grocery store.
Green tea leaves are not allowed to oxidise or ferment after picking, I think any brand of good quality green tea can be used for making pink tea. There is no need to add any chemicals like baking soda to get pink colour, if you use a suitable recipe.
