does any 1 have the recipe for pink tea (kashmiri chai).? i hope pink tea is called kashmiri chai. :slight_smile:

1 tsp. Loose Tea (Lipton, Red Label, Tappal, or any of your preference.)
4 Cardamom Pods (Choti Ilaichi) (bruised)
1 small Cinnamon Stick (Dal Cheeni) (broken upin half)
A pinch of Saffron Threads (Zaffron) (this gives the tea the pink color.)
4 cups Water
2 tbsp. Almonds (Baadaam) (finely powdered)
Honey (Shehed) (to taste)

Combine all of ingredients above except the honey and almonds in a saucepan. Bring to a boil on a medium flame. Reduce heat to a simmer and let it simmer for 5 minutes.

Add a teaspoon of almonds in the bottom of each cup for serving and pour the hot tea over. Sweeten with honey to taste before serving.

^but in kashmiri chai you put salt not sweet stuff and kashmiris make it the way it shows in the link I provided.

my aunty came over once and she made wat she called kasmiri chai...it was sweet though. Does anybody know the recipe for that?

Recipe for Kashmiri Chai as we drank it in India:.

Take almonds about 3-6 for each cup and shave/slice them w a non-serated knife into the cups.

  • Add water to a pot. For four cups you may need 6 cups, as a lot of it will reduce.
  • Add cardamum, sugar and cinamon sticks to the water. This tea is supposed to be extra sweet so add over a spoon of sugar for each cup, up to spoon and a half (crushed cardamum about 3-4 for each cup; break 1-2 sticks into the water for about four cups)
  • Bring to a boil.
  • Let simmer for ten minutes covered or uncovered. covered will help the water from reducing too much. water will turn pink after ten minutes.
  • Add only a small amount of loose tea as you would for iced tea. So this might be just under 1/4 teaspoon for each cup. (the trick is not to use too much tea. It should be a lightly flavored tea.

(A special type of tea is used for Kashmiri chai . However here in Canada, I use the regular loose tea).

  • Remove from heat immediately.
  • Pour into cups with shaved almonds. Make sure the almonds are fresh.

Enjoy.

Note:
After you make it a few times, you will see how much cardamum, cinamon, sugar and tea you like. Make sure the sugar is in the tea from the beginning. Adding at the end gives it a different flavor.

I thought you use green tea to make kashmiri chai? A friend of mine did it, and she used green tea to do it.

there are two types of kashmiri tea; one we call kehwa, which is 'green tea' and is drank either flavoured with cinnamon or sugar, or both. The other we call 'nun chai' (which means 'salty tea'), its also called 'sheer chai' (sheer means 'milk' in koshur) which is the 'pink tea' and is prepared with salt.
