Re: Karhai Chicken - Recipe
Mine's pretty simple. I fry some ginger/garlic paste and green pepper in some oil till the paste is golden brown, add the meat and fry some more. Then add salt, crushed corriander. crushed red chillies, crushed peppercorn and some grated ginger(actually quite a bit) and let it cook. The chicken releases enough liquid so no need to add water. Once its almost cooked add chopped tomatoes and cook some more till tomatoes soften. squeeze some fresh lemon juice and sprinkle fresh corriander leaves. Should turn out good.
Re: Karhai Chicken - Recipe
We usually cook the, garlic, ginger, tomatoes and tomato paste first for long time until it becomes very thick and with good bhoonifying smell...then we add chicken and rest of the masala. Making sure that tomatoes are very well bhoonified and are not watery will give it much better taste.
Re: Karhai Chicken - Recipe
Here's how my mom makes it:
get a wok or a non stick pan. fry one chicken (pieced or breast pieces) in 1/4 cup oil. add a bit of salt for flavour. Once the chicken is done...ie a bit browned and cooked, add 3/4 tsp red mirch powder, 1/2 tsp tandoori masala powder, 1/4 tsp haldi, 2 chopped jalapeno peppers, garlic, and ginger. once everything is mixed, cook for 5- 10 minutes. Then add 4 or 5 chopped tomatoes. cover pot. keep stirring every 3 mins. it is done when the tomatoes are invisible..after bhooning and the oil separates. add chopped dhania. yum!
