my mom makes very good qeema kareela/ chana kareela.
but she is not here, you need to wait for next 24 hours for recipe.

I have never made it but I am sure I can make the best qeema karailey using any recipe from internet or youtube.

peel and de-seed the karela, cut it however you want, then put about 1-2 spoons of salt and let it rest fr 15-20 minutes, then put some dry aata or flour on the karelas and rub the aata on the karela for a minute or so then wash them achi tarha se and squeeze water out, daba kar.
Heat some oil, put dried, drained karela, and let it fry on medium for 10 mintes or so then take it out. Cut about 2 medium size onions and fry in the same oil, when it is translucent, add 1 green chilli, some ginger garlic paste, and let it fry for another 1 minute, then add 1-2 tomato, and let it cook for another 1-2 minutes, then add salt, red chilli powder, dry coriander powder, about a tea spoon garam masala powder, let it fry for 1 minute or so and then add qeema, bhoonofy achi tarha se, and let it cook. When qeema is almost done, add the karela, bhonify for another 3-4 minutes, if the qeema-karela is too dry add about 1/4 cup of water and let it cook on slow until done. Put some green dhaniya at the end and enjoy.
Some ppl like their kalera salan to be a bit khata, they add 1/2 teaspoon amchor powder, we don't like it that way so I never added anything to make it sour.

^ Dosa chick that EXACTLY how we make it but we don't rub aata after salting the karelas. We wash it with milk & then water. Also we leave it for at least 30 minutes to max 2 hours to take the bitterness out.
We do sprinkle some lemon juice at the end as well.
Sara try the recipe Dosa Chick posted. It tastes yum & there is rarely any bitterness. Just make sure that after you salt the karelas they'll leave a lot of water & while you wash them be careful, they break easily after salting.
I am craving me some karelas now. Its been ages since I had any.

I don't think I quite mind the bitterness..lol...waise, does the soaking in saltwater and frying..does that take out the nutritional benefit of it?

Quickest way to get bitterness out is :
1- wash and peel karelay,de-seed,cut thick slices
2- rub salt and keep aside for 10 minutes;meanwhile boil water enough to dip karelay
3. Wash them,add 4-5tbsp vinegar to water,add karelay,boil for half a minute,drain,dry,fry and use
I like karelay with dhairrr sara dum wala onions and tomatoes as well..no qeema or meat

Ya they're supposed to be bitter. If you take out all the bitterness, bachara karela loses all it's identity.

you can fry kereela before cooking. it will remove bitterness.
